Pineapple Sesame Teriyaki Baked Chicken

Fresh pineapple, sesame seeds and homemade teriyaki sauce are added to this baked chicken recipe for a flavorful, simple and gluten free dish!
Last week I wanted to create a baked chicken dish and was having a hard time deciding between Sesame Chicken and Teriyaki Chicken, so I combined them both in this one delicious dish!
A little sweet, a little salty, and best of all, super SIMPLE!
Pineapple Sesame Teriyaki Baked Chicken Ingredients
- ½ pineapple (peeled & sliced)
- 3-4 chicken breasts
- ¼ cup soy sauce
- ¼ cup honey
- ½ cup pineapple juice
- ¼ cup cooking sake
- 2 garlic cloves (crushed)
- 1 tsp ground ginger
- 1 tbsp sesame seeds
Pineapple Sesame Teriyaki Baked Chicken Instructions
Preheat the oven to 350°F.
Place a layer of sliced pineapple in the bottom of an oven-safe baking dish.
Place the chicken breasts on top of the pineapple.
In a small bowl whisk the soy sauce, pineapple juice, honey and cooking sake together. Add the garlic and ginger, whisk well.
Pour the sauce over the chicken. Sprinkle the sesame seeds on top.
Cover and place in the oven for one hour.

The first time around, I placed the chicken breast whole on a bed of cilantro white rice with a couple slices of the pineapple.
I then saved the two additional chicken breasts to eat as leftovers and had the great epiphany to shred the chicken and dice the pineapple, then place it on top of the rice to make a chicken and rice bowl.
I loved the rice bowl option, but I also tried placing the chicken and rice in lettuce wraps and loved that as well!

- ¼ cup soy sauce, tamari for gluten free
- ¼ cup honey
- ½ cup pineapple juice

Instructions
