Buffalo Chicken Mini Calzones

These delicious mini calzones are filled with three cheeses and buffalo chicken for a great easy snack or party appetizer!

For a buffalo sauce obsessed, football loving, beer drinking girl, this is my favorite holiday of the year!
Ok, ok, I get it, it’s not technically a holiday, but for me it is!
Every year I throw my annual Superbowl party with beer, and games, and food, lots and lots of food!
Of course, dishes with buffalo sauce are not lacking at my party!
I always pull at least one recipe from my cookbook, like these Buffalo Chicken Meatball Subs, then add the must-have party apps to the menu like Buffalo Cheeseburger Dip, Buffalo Chicken Salad Sliders, Buffalo Chicken Phyllo Rolls and Cheesy Buffalo Turkey Grilled Flatbreads.
This year, I’m adding a new favorite to the mix, these Mini Buffalo Chicken Calzones.
Buffalo chicken + cheesy goodness in the form of a handheld calzone, yes please!
Whip these up for the big game, and you’ll have a lot of happy fans in your house!
Buffalo Chicken Mini Calzones Ingredients
- 16 oz pizza dough (click link for homemade recipe)
- 2 cups boneless, skinless chicken breasts (cooked & shredded)
- ½ cup buffalo sauce
- 1 cup ricotta cheese
- ½ cup mozzarella cheese (shredded)
- ¼ cup parmesan cheese (grated)
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tsp dried oregano
- ½ tsp red pepper flakes
- ½ cup pepperoncinis (sliced)
- 1 egg (whisked)
- 1 tsp water
- ½ cup blue cheese dressing (optional – for dipping)
Buffalo Chicken Mini Calzones Instructions
For this recipe, you can purchase pizza dough at the grocery store, if you want to save a little time, or prepare the pizza dough at home. It’s super simple, you just need to give it an hour to rise.
Once the dough is ready to go, preheat the oven to 375°F.
Combine the chicken and buffalo sauce in a medium bowl, then set aside.
In another bowl, combine the ricotta, mozzarella, parmesan, garlic powder, onion powder. oregano and red pepper flakes.
Divide the dough in half, roll the dough out to app ¼ inch. Use a 3” pastry cutter to cut circles in the dough.
Remove the excess dough around the circles.
Set the circles aside and roll out the remaining dough (including the excess dough that you set aside). Cut circles in the dough, remove the excess dough, and roll out again, cut the circles, and repeat until all of the dough has been used and you have app. 16 circles of dough.
*If you’re not crazy uptight about every calzone being the exact same size (like I am!), or if you don’t have a pastry cutter, you can simply divide the dough into app. 16 golf ball sized balls.
Whether you have circles or balls of dough, at this point, you’ll want to roll each one out to app ⅛ inch thickness.
Spread the ricotta cheese mixture on each circle, leaving the edges clear. Place a spoonful of buffalo chicken in the middle of each circle, then top with a couple of pepperoncinis.
Combine the whisked egg & water in a small bowl. Use your finger, or a small brush to brush the edges of the dough with the egg wash.
Pick up each calzone and stretch two sides of the dough out and over the filling. Use your fingers to press each calzone closed, then place the calzones on a baking sheet.
Brush the tops with the additional egg wash.
Place the mini calzones in the oven and bake for 15-20 minutes.
