Since I released my cookbook Buffalo Style in 2013, one of the most requested recipes from the book is this buffalo cheddar biscuit recipe!

If you love Red Lobster’s Cheddar Bay Biscuits, then you’re really going to love this biscuit recipe with a buffalo style twist! I was inspired to share this cookbook recipe on the blog after I had an idea a couple of weeks ago to make a Buffalo Fried Chicken Eggs Benedict. Obviously served over Buffalo Cheddar Biscuits!

My husband Kurt and I love to brunch at Hash House A Go Go on the weekends. Our favorite dish is Andy’s Famous Sage Fried Chicken Benedict. It features a fresh biscuit with sage fried chicken, fresh spinach, tomato, hardwood smoked bacon, griddled mozzarella, chipotle cream and scrambled eggs. Um yeah, what’s not to love about all of that?!

I decided to make my own version at home with a buffalo style twist. Let’s just say that defining this as the “Breakfast of Champs” would be a huge understatement! I’m excited to share the base of this delicious dish today, these buffalo cheddar biscuits.

They’re buttery, garlicky biscuit goodness with a slight kick of spice from the buffalo sauce. These biscuits are just plain delicious!

Buffalo Cheddar Biscuit Recipe Ingredients on a granite countertop

Ingredients

Here I explain the best ingredients for this cheddar biscuit recipe with buffalo sauce, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.

  • Bread flour – you can also use all-purpose flour, but bread flour contains more protein which leads to a biscuit with a chewy texture, and a crisp exterior.
  • Baking powder
  • Baking soda
  • Granulated sugar
  • Salt
  • Garlic powder
  • Cheddar cheese – I recommend grating your own sharp cheddar cheese at home with a box grater instead of purchasing pre-grated cheese at the grocery store. It melts better because it doesn’t contain the additives that the pre-grated cheese does.
  • Buffalo sauce – I like to use Frank’s RedHot, but feel free to use your favorite brand.
  • Buttermilk
  • Unsalted butter
  • Fresh parsley

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions, scroll to the recipe card at the bottom of this post. 

  1. Mix up the dough. In a large bowl, mix the flour, baking powder, baking soda, sugar, salt, garlic powder and cheddar cheese together. In a separate small bowl, whisk the buffalo sauce, buttermilk and butter together. Add to the flour mixture and stir until the dough forms.
  2. Bake the biscuits. Place 12 heaping spoonfuls of the dough on a baking stone, or baking sheet lined with parchment paper. Bake at 425°F for 12 minutes.
  3. Prepare the topping. While the biscuits are in the oven, prepare the topping. Melt butter in a small bowl then whisk in buffalo sauce, garlic powder and parsley. Remove the biscuits from the oven, and brush with the topping. Place the biscuits back into the oven for 2-3 minutes. Remove from the oven and enjoy.

Store leftover cheddar biscuits in an airtight container in the fridge for up to 5 days. Reheat them wrapped in foil in a 350°F oven for 6 minutes, unwrap the top of the foil and heat for another 4 minutes.

Cheddar Biscuits with Buffalo Sauce

These Cheddar Biscuits with Buffalo Sauce are soft, cheesy, and packed with a spicy kick! Ready in just 25 minutes, they’re the perfect bold and flavorful side for any meal.

  • Preheat the oven to 425°F.
  • In a large bowl, mix the flour, baking powder, baking soda, sugar, salt, garlic powder and cheddar cheese together.
  • In a separate small bowl, whisk the buffalo sauce, buttermilk and butter together. Add to the flour mixture and stir until a dough forms.
  • Place 12 heaping spoonfuls of the dough on a baking stone. Place in the oven and bake for 12 minutes.
  • While the biscuits are in the oven, prepare the topping by combining 2 tablespoons melted butter, 1 tablespoon buffalo sauce, ½ teaspoon garlic powder and 1 teaspoon fresh chopped parsley in a small bowl.
  • Remove the biscuits from the oven, and brush with the garlic butter topping.
  • Place the biscuits back into the oven for 2-3 minutes. Remove from the oven and serve warm.
