Irish Cream & Guinness Brookies

Irish Cream Guinness Brookies are made up of a layer of Guinness Brownies, topped with a layer of Irish Cream Chocolate Chip Cookie Dough, perfect for St Patricks Day!

Ever since I created the first brookie recipe on the blog for Gluten Free Nutella Brookies, then Red Velvet Brookies for Valentine’s Day, I’ve pretty much made it my mission in life to create every brookie combination possible!
With St. Patrick’s Day less than two weeks away, I knew that I had to create a special brookie for one of my favorite holidays!
Last year I made Irish Cream Donuts with a Chocolate Glaze to celebrate the holiday, this year I created these Irish Cream & Guinness Brookies.
Yes, that’s a layer of Guinness Brownie Batter, topped with a layer of Irish Cream Chocolate Chip Cookie Dough, with a few green M&M’s thrown in, you know, for festive reasons! 😉
I posted a “behind-the-scenes” picture of these on Instagram before they went into the oven and people basically flipped, so I’m super excited to share the recipe today!
Irish Cream Chocolate Chip Cookie Dough Ingredients
- 2 cups flour
- ½ tsp kosher salt
- ½ tsp baking powder
- ¾ cup butter (melted)
- ½ cup granulated sugar
- 1 cup brown sugar
- 1 egg
- 1 egg yolk
- 1 tbsp vanilla
- 1 ½ cups chocolate chips
- ¼ cup green M&Ms
- ½ cup irish cream liqueur
Guinness Brownie Batter Ingredients
- ½ cup butter (at room temperature)
- 1 cup Guinness
- 2 cups sugar
- 1 tsp vanilla
- 2 eggs
- 1 ½ cup flour
- 1 ½ cup cocoa
- ½ tsp kosher salt
- ½ tsp baking powder
Preheat the oven to 325°F.
Prepare the cookie dough by combining the flour, kosher salt and baking powder in a mixing bowl.
In a separate mixing bowl, combine the melted butter and sugars.
Blend well then beat in the eggs, vanilla and Irish cream liqueur.
Next, add the flour mixture.
Hand mix in the chocolate chips and M&Ms.
Place the cookie dough in the refrigerator to chill while preparing the brownie batter.
To prepare the brownie batter, cream the butter, Guinness and sugar together in a large bowl.
Add the vanilla and eggs, and combine.
Mix the cocoa, flour, baking powder and kosher salt together in a separate bowl.
Add the cocoa flour mixture to the butter sugar mixture and blend well.
Spread the brownie batter into a 9 x 13 baking dish sprayed with cooking spray.
Remove the cookie dough from the refrigerator and spread on top.
Place in the oven to bake for 50-55 minutes.
Slice the Irish Cream Guinness Brookies into squares and serve.
I lovingly named these “Boozy Brookies” and I’m pretty much obsessed with them!

Great recipe! My batch is in the oven. I have a few follow-up questions:
1. In the brownie recipe you specify “baking soda,” but in the ingredient list above you write “baking powder.” Which one? I went with baking powder and they look fine…so fingers crossed!
2. What kind of salt should go in the brownie mix? Above you specify “kosher” salt…same below, too?
