Here I explain the best ingredients for this lamb seasoning recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.
- Garlic powder (or granulated garlic) – the only difference between granulated garlic and garlic powder is that the powder has been ground finer, than the granulated garlic. I prefer to use granulated garlic because it’s less likely to clump over time, than garlic powder.
- Dried rosemary
- Dried thyme
- Dried mint
- Onion powder (or granulated onion) – the only difference between granulated onion and onion powder is that the powder has been ground finer, than the granulated onion. I prefer to use granulated onion because it’s less likely to clump over time, than onion powder.
- Ground coriander
- Sea salt (or kosher salt) – I prefer either kosher or sea salt, over table salt, in this seasoning mix because of their coarse texture and superior flavor.
- Black pepper
Instructions
Combine all of the dried herbs and spices in a bowl. Transfer to an airtight container for storage. Store in a cool, dry place for up to 6 months.
After 6 months, the spice blend will not “go bad”, but as dried herbs and spices sit longer, they begin to lose their flavor.
Ways to use it
- Make lamb burgers. Follow my original inspiration for this spice mix by combining ground lamb with this seasoning mix to make delicious burgers!
- Season lamb chops. Rub lamb chops on all sides with olive oil, then coat in this spice rub. I recommend using 1 ½ tablespoons of seasoning per pound of meat. Grill the lamb chops over medium heat for about 4-5 minutes per side, or until they reach an internal temperature of 125°F.
- Make a lamb roast in the oven. Rub a bone-in or boneless lamb leg with olive oil on all sides, then coat it in the seasoning mix. Place in a roasting pan and roast at 400°F for 1 hour and 30 minutes, or until the internal temperature reaches 125°F for medium-rare lamb.
- Slow cook a lamb roast in a Crock Pot. Rub a bone-in or boneless lamb leg with olive oil on all sides, then coat in the seasoning mix. Place in a slow cooker set to low. Add 2 cups beef broth. Cook for 10 hours on low.
- Smoke a rack of lamb. Follow this recipe for Smoked Rack of Lamb from my friends at Traeger. Replace the garlic and rosemary in their recipe with 3 tablespoons of this seasoning blend.
