A meatloaf sandwich is the perfect way to use up meatloaf leftovers. The sandwich falls somewhere between a classic patty melt and a bbq cheeseburger, and I’m here for every delicious, hot and cheesy bite!

This is truly the best meatloaf sandwich and here’s why I know you’ll love it.

The meatloaf is sandwiched between sharp cheddar cheese, mayonnaise, bbq sauce, pickles and onions, creating a variety of flavors that creates a sandwich masterpiece!
  3. It’s easy to make! Using leftover meatloaf means that these sandwiches come together in just 15 minutes. Perfect for a hot lunch or dinner.

Ingredients

Here I explain the best ingredients for this classic meatloaf sandwich recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.

  • Butter
  • Sourdough bread – you could also use rye bread or Texas toast. Feel free to use your favorite bread, just make sure that it’s thick and hearty so it can hold up to all of the goodness packed into this sandwich!
  • Mayonnaise – if you’re not a fan of mayo, you can just double up on the bbq sauce.
  • BBQ sauce
  • Sharp cheddar cheese – I recommend slices for even melting over the sandwich. In a pinch, you could use shredded cheddar.
  • Dill pickles – I love the bite and crunch that pickles add to the sandwich, if you’re not a pickle fan, feel free to leave them off of the sandwich.
  • Onions – for this meatloaf sandwich recipe, I used fried onion strings. I love the crispy bite that they add to the sandwich and the flavor pairs perfectly with the bbq sauce. If you would like to switch things up, you can use raw onions or caramelized onions on the sandwich.
  • Meatloaf – you can use fresh or leftover meatloaf for this recipe. This sandwich will work with pretty much any meatloaf. Over the years, I’ve made it with this smoked meatloaf recipe, Crock Pot meatloaf, turkey meatloaf, and air fryer meatloaf.

Feel free to add other sandwich toppings, like lettuce or tomato, to the sandwich if you’d like.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions, scroll to the recipe card at the bottom of this post.

  1. Spread butter and sauce on sliced bread. Spread softened butter on one side of each slice of bread. In a small bowl, combine bbq sauce and mayonnaise. Spread this mixture on the other side of each slice of bread.
  2. Assemble the sandwich. Add two slices of cheese on top of the bbq mayo on each slice of bread. Add the toppings of your choice to half of the slices of bread, on top of the cheese. I used sliced dill pickles and fried onion strings.
  3. Heat the meatloaf. Heat a griddle pan, or skillet, on the stove over medium-high heat. Once the pan is hot, add the meatloaf slices and heat them up for 2 minutes per side. Place a slice of meatloaf on top of the toppings on half of the slices of bread. Sandwich the other half of the slices of bread with cheese on top of the meatloaf.
  1. Cook the sandwich. Place the sandwich in the same pan that you heated up the meatloaf. Cook for 3-4 minutes on each side, or until the bread is golden brown and toasty. Slice in half and serve immediately.

This meatloaf sandwich is best served hot, so only make as many sandwiches as you plan to eat in one setting. You can always assemble and cook more later.

Meatloaf Sandwich

Leftover meatloaf just got a serious upgrade with this easy and delicious Meatloaf Sandwich recipe! Piled high with juicy slices of meatloaf, melty cheese, and bbq sauce, all tucked between buttery toasted bread, this sandwich is the ultimate way to enjoy comfort food in handheld form.

Ingredients

  • 2 tablespoons butter, softened
  • 4 slices sourdough bread, or Texas toast
  • 2 tablespoons mayonnaise
  • 2 tablespoons bbq sauce
  • 8 slices sharp cheddar cheese
  • 12 slices dill pickles
  • ½ cup fried onion strings, or use caramelized or raw onions instead
  • 2 slices cooked meatloaf

Instructions

  • Spread one side of each slice of bread with butter.
  • Combine the mayo and bbq sauce. Spread the other side of each slice of bread with this mixture.
  • Place two slices of cheddar cheese overlapping in the middle on top of the bbq mayo on each slice of bread, then add 6 dill pickle slices and fried onions on two of the bread slices.
  • Heat a large skillet on the stove over medium-high heat.
  • Add the slices of meatloaf and heat up for 2 minutes per side.
  • Remove the meatloaf from the skillet, then place a slice on top of the pickles and onions on the two slices of bread, then sandwich with the other 2 slices of bread on top with the butter facing out.
  • Place the sandwiches in the same skillet that you heated the meatloaf and cook for 3-4 minutes per side, or until the bread is golden brown.

Notes

  • If you’re not a fan of mayo, you can just double up on the bbq sauce.
  • The dill pickles and fried onions are optional toppings that can be left off of the sandwich, or substituted with your favorite sandwich toppings.
