Mediterranean Grilled Vegetable & Hummus Plate

For today’s post, I partnered up with my friends at Sabra Hummus to share this tasty Mediterranean platter filled with grilled vegetables and Sabra Hummus!
One of my favorite things about grilling is the camaraderie around it. You get your friends and family together, fire up the grill and spend all day outside soaking up the sun with wonderful conversation and great food.
Between the burgers and brats, it’s time for the “unofficial meal” of the day, and that’s where Sabra Hummus, and this Mediterranean Grilled Vegetable Platter comes into play!
When friends and family want something to snack on in the middle of the day, whether hanging by the pool, at the beach or at a backyard BBQ, it’s time to fire up the grill to share a simple, fresh and delicious mid-day snack, the Mediterranean Grilled Veggie & Hummus Plate.
For this platter, I grilled up mini peppers, zucchini, yellow squash and mushrooms. I also tossed some pepperoncinis on the grill, as well as slices of pita bread and feta cheese.
I served all of these delicious grilled goodies with Sabra Roasted Red Pepper and Roasted Garlic Hummus for dipping.
This is one snack plate that your friends and family will be requesting at every BBQ for years to come!
Grilled Vegetables & Hummus Plate Ingredients
- 4 pieces pita bread
- 1 large yellow squash
- 1 large zucchini
- 10-12 mini peppers
- 1 cup whole peperoncinis
- 8 oz whole baby bella mushrooms
- 8 oz block feta cheese
- Sabra Roasted Red Pepper Hummus
- Sabra Roasted Garlic Hummus
Grilled Vegetables & Hummus Plate Instructions
Slice the pita bread into triangles.
Slice the yellow squash and zucchini in half lengthwise, in half through the middle, then slice into sticks.
Place the squash, zucchini, mini peppers, pepperoncinis and baby bella mushrooms on the grill. Grill for 3-4 minutes per side, then flip and grill for an additional 3-4 minutes.
Add the pita bread to the grill and grill for 1-2 minutes per side.
Add the whole feta cheese block to the grill and grill for 1-2 minutes per side, or just until it begins to melt.
Remove everything from the grill and arrange on a large cutting board with the Roasted Red Pepper and Roasted Garlic Hummus.
I could not get enough of the grilled squash and zucchini dipped in the Roasted Red Pepper Hummus and the mini peppers and pepperoncinis in the Roasted Garlic Hummus, SO good!
My friends loved dipping into this delicious platter at my BBQ last weekend while sipping on Grilled Strawberry Lemonade!

Ingredients
- 4 pieces pita bread
