This copycat Grillo’s pickle de gallo recipe is fresh, flavorful and easy to make in 10 minutes! It’s great with chips, the perfect topping for a hot dog, and delicious on these burger bowls.

Pickle de gallo is a fun spin on pico de gallo. In this recipe, the tomatoes traditionally found in pico de gallo are replaced with dill pickles and the lime juice is replaced with pickle juice.
Originally created and sold by Grillo’s pickles, this copycat version is just like their medium pico de gallo, but you can easily leave out the jalapenos to make it mild. This fun new recipe is perfect as an appetizer, side dish, or condiment. Here’s why I know you’ll love it!

Ingredients
Here I explain the best ingredients for this pickle de gallo recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.
- Dill pickles – this recipe is meant to be salty, savory and just a little bit spicy. If you’d like to make it sweet, you could use sweet bread and butter pickles, instead of dill pickles. I recommend using full-sized pickles, or baby pickles, instead of spears or chips. They’re easier to dice into small equal-size pieces. You’ll also need some of the pickle brine from the jar of pickles for this recipe. If you want to be an overachiever, you can even make homemade pickles.
- White onion – for this recipe I used a vidalia onion, which is on the sweeter side than a traditional yellow onion or a red onion. I find that it pairs well with the flavor of the pickles, but feel free to use the onion of your choice.
- Red bell pepper
- Jalapeno – adding a tablespoon of minced jalapenos adds just a slight amount of heat to this pickle de gallo. If you’d like to make it mild, you can leave out the jalapeno, or reduce it down to a teaspoon. If you’d like to make a spicy pickle de gallo, add 1 minced habanero pepper, in addition to the jalapeno.
- Garlic – I recommend a fresh clove of garlic. You’ll want to crush it, or finely mince it, so that it’s easily incorporated into the pickle de gallo.
- Salt – to season the pickle de gallo and bring out all of the fresh dill flavors.
Instructions
I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions, scroll to the recipe card at the bottom of this post.
- Finely dice pickles, onions, red bell peppers and jalapenos. Add them to a large bowl with salt, pickle brine and crushed garlic.
- Stir to combine everything. Cover and place in the refrigerator. I recommend letting the pickle de gallo sit in the fridge for at least an hour before serving. This will allow all of the flavors to combine.
The pickle de gallo will stay good in the fridge for 8-10 days, so feel free to make it ahead. I find it most flavorful after it’s sat in the fridge for 24 hours.
Ways to serve it
This pickle de gallo is great as an appetizer, served like salsa with your favorite chips for dipping. It’s also a delicious condiment with a number of different meals. I always love to serve it on pulled pork sandwiches and in burger bowls! Try it with any of these tasty recipes.

Pickle De Gallo
Ingredients
- 2 cups dill pickles, finely diced
- ½ cup vidalia onion, finely diced
- ½ cup red bell pepper, finely diced
- 1 tablespoon jalapeno, minced
- 1 clove garlic, crushed
- ½ teaspoon salt
- ¼ cup pickle brine
Instructions
- Combine all ingredients in a bowl.
- Place in the refrigerator for at least an hour for the flavors to combine. Store in the fridge for up to 10 days.
