There’s nothing I love better than a good, hearty dip to dip a chip into! In my opinion, a good dip needs a creamy base, flavorful seasoning and plenty of extra ingredients that add even more flavor and texture. Lucky for you, this dip meets all of those requirements!
It’s basically like turning black bean corn salsa into a creamy, cheesy dip. It’s delicious served cold, dipped up with corn chips or tortilla chips. And it’s so easy to make!
It’s perfect for a party, game day, or just to dip up for a weekend snack!
Ingredients
- Cream cheese – for the creamy base of the dip, you’ll want a block of softened cream cheese. To easily soften it, leave it out at room temperature for 30 minutes before starting this recipe. You can also microwave it in a bowl for 30 seconds.
- Sour cream – combined with the cream cheese, these two ingredients make a perfectly creamy base for the dip.
- Southwest seasoning – this is the secret ingredient in this dip recipe that adds a ton of flavor to the dish! Click the link for my homemade spice blend that you can mix up in just 5 minutes with ingredients like chipotle chili powder, garlic powder, onion powder, ground cumin and salt. It’s smoky, spicy and so flavorful! In a pinch, you could use homemade taco seasoning instead, or pick up premade southwest seasoning, or taco seasoning at the grocery store.
- Corn – drained from a can is perfect for this recipe.
- Black beans – for this recipe, you’ll use black beans drained and rinsed from a can. This makes this recipe quick and easy.
- Cheddar cheese – the delicious taste of sharp cheddar adds an extra layer of creaminess and flavor to the dip.
- Green onions – I like to mix the onions in the dip, and save a few extra to garnish the dip, for a pop of color, flavor and crunch on top!
Instructions
- Add cream cheese, sour cream and southwest seasoning to a large bowl.
- Use an electric hand mixer to combine the ingredients until smooth and creamy.
- Add black beans, corn, shredded cheddar cheese and diced green onions to the bowl with the cream cheese mixture.
- Use a spatula to stir all of the ingredients together until well mixed.
What to serve it with
I like to serve the dip with large corn chips, usually labeled “scoops”. It’s also delicious with thick tortilla chips that can hold up to the hearty dip!
You could also serve the southwest dip with fresh vegetables, like sliced bell peppers, mini peppers, cauliflower florets, or carrots for dipping.
Additions and variations
- Make it spicy! Mix in 1-2 tablespoons of your favorite hot sauce to spice up this dip. You could also use a spicy cheddar cheese, in place of the sharp cheddar cheese. Or add a 4 ounce can of diced jalapenos.
- Add tomatoes. Add 1 cup diced roma tomatoes, or a 10 ounce can of drained diced tomatoes with green chilies.
- Top it with pico! Instead of mixing tomatoes into the dip, you could top the dip with a cup of pico de gallo.
- Serve it hot. If you’d like to bake this southwest dip, simply assemble it as instructed, but do not mix in the cheddar cheese. Instead, place the dip in an oven-safe bowl, or baking dish, top it with the cheddar cheese and bake in a preheated 350°F for 15-20 minutes.
Recipe tips
- You can make this southwest dip up to 2 days in advance. Cover it with a lid or plastic wrap, and store it in the refrigerator until you’re ready to serve it.
- The cream cheese should be softened before mixing it into the dip. To do this, either let the cream cheese sit at room temperature for at least 30 minutes, or microwave the cream cheese for 20-30 seconds.
- I recommend you allow the dip to chill for 30 minutes before serving. As the dip sits in the refrigerator, all of the ingredients begin to meld together. The flavors are enhanced and you’ll get delicious results, even hours after the dip is made!
- This dip is vegetarian using the ingredients shown above.
- This recipe is gluten free using the ingredients shown above. If purchasing premade southwest seasoning, or taco seasoning, always check the label to make sure it’s gluten free.
How to store it
Store this southwest dip in the fridge in an airtight container for up to 7 days.
I do not recommend freezing the dip, as sour cream does not freeze well. The dairy will separate when frozen and the texture will not be the same once the dip is defrosted.
