This Spiralized Jicama & Avocado Salad is a unique and healthy recipe that is gluten free & vegetarian. It’s great for lunch or served as a side dish!
When I first purchased my Spiralizer, I went to the grocery store, perusing the produce section for anything and everything I could potentially spiralizer. One of the items that I found was jicama.
Jicama, also known as a “Mexican Yam” is a vegetable traditionally from Mexico and Central America. It’s a slightly sweet, starchy vegetable that resembles the consistency of a pear or apple. It’s high in dietary fiber and Vitamin C making it a healthy addition to your diet!
Up until today, Jicama has only made one appearance on the blog as a “chip” of sorts, topped with mango salsa.
My inspiration for this recipe came from a restaurant I ate at in LA. Instead of chips with the guacamole, they served sliced jicama.
I took that concept and made it into a salad, combining all of the elements of guacamole with the spiralized jicama.
I tossed the salad in a homemade Honey Lime dressing that was first seen on this Grilled Romaine Mexican Chopped Salad on the blog in May of last year.
Now it’s time to be totally honest with you all. I’m pretty sure that you could put that dressing on anything and it would be delicious!
My exact quote from the original post where I created this dressing: “I actually took a flour tortilla and dipped it in the dressing just to prevent myself from eating it with a spoon!”
That’s real life. It happened again yesterday. Except I didn’t have tortillas, so I used a pretzel. Yes, seriously, I dipped a pretzel in salad dressing as a means to eat it without sticking a straw directly in it! 😉
Jicama and Avocado Salad Ingredients
- 1 large jicama
- 1 cup cherry tomatoes (quartered)
- ¼ cup ed onion (diced)
- 1 jalapeño (minced)
- ½ cup honey lime dressing (click link for recipe)
- 1 avocado (diced)
Peel the jicama. In the picture the jicama is already peeled. I got so excited about spiralizing that I completely forgot to take the “ingredient” picture until after I had already peeled the jicama!
Once it’s peeled, place the jicama on the Spiralizer. Use Blade C to spiralize.
Once spiralized. Add the jicama to a large bowl with the tomatoes, onions and jalapeños.
Pour the dressing over the top and toss to coat.
Place in two bowls and top with the diced avocado.
Simple as that you have a fun new salad that is totally unique, healthy & scrumptious!
This is a great salad to take to work. You can toss it with the dressing in the morning and it won’t wilt before lunch, like lettuce does.
