Sweet Potato Double Chocolate Cookies

Mashed sweet potatoes add a delicious creaminess to this recipe for Double Chocolate Cookies, the perfect dessert for chocolate lovers!
Last night, I was invited to make a guest appearance on Tonight In San Diego, a fantastic variety show featuring local San Diego talent.
During my appearance I talked about holiday entertaining and showed them a few of my favorite holiday recipes including Mini Buffalo Chicken Tostadas for an appetizer, Grapefruit Ginger Spiced Rum Punch for a cocktail and these “Secret Ingredient” Double Chocolate Cookies for dessert.
I shared the cookies with the hosts, crew and a few lucky guests sitting in the front row of the live taping.
People went crazy for them and were so surprised when I told them that the secret ingredient was sweet potatoes!
You see, a couple of years back I made Gluten Free Sweet Potato Brownies, and they were such a hit, that I knew I had to make chocolate sweet potato cookies this year!
I used sweet potatoes to add a delicious creamy texture to the cookies, while cocoa and chocolate chips doubled up on the chocolate flavor!
If you’ve got a chocolate fan in your fam, these cookies are a must bake!
Sweet Potato Double Chocolate Cookies Ingredients
- 1 cup flour
- 1 cup cocoa
- ½ tsp salt
- ½ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- ¾ cup butter (melted)
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg
- 1 egg yolk
- ½ cup sweet potatoes (peeled, cubed, boiled & mashed)
- 1 (12 oz) bag chocolate chips
Sweet Potato Double Chocolate Cookies Instructions
Preheat the oven to 325°F.
Combine the flour, cocoa, salt, baking powder, cinnamon, ginger, nutmeg and cloves in a mixing bowl.
In another mixing bowl, combine the melted butter, brown sugar and granulated sugar.
Add the vanilla extract, egg and egg yolk, mix well.
Add the sweet potato. Combine well, then add the dry ingredients.
Mix in the chocolate chips.
Drop large tablespoons of cookie dough onto a baking sheet.
Bake for 25-30 minutes.
Serve with a glass of cold milk, or some of that rum punch if you’re feeling really festive! 😉

- 12 oz chocolate chips
Instructions
- Preheat the oven to 325°F.

- In another mixing bowl, combine the melted butter, brown sugar and granulated sugar.
- Add the vanilla extract, egg and egg yolk, mix well.
- Add the sweet potato.
- Combine well, then add the dry ingredients.
- Mix in the chocolate chips.
- Drop large tablespoons of cookie dough onto a baking sheet.
- Bake for 25-30 minutes.
