I love baked brie! I mean, who doesn’t? It’s melty, creamy, cheesy goodness, generally surrounded by sweet friends, like fruit and jam!

Every year around the holidays, people go crazy for this Baked Brie Bread Bowl with Caramelized Pears and this Salted Caramel Pecan Baked Brie. Both are really solid options for serving at parties and guaranteed to be a crowd pleaser!

Now if you’re looking for something a little less messy and easier to tray pass, these Baked Brie Puff Pastry Bites are where it’s at! All the goodness of brie en croute, (the fancy French term for baked brie wrapped in puff pastry) but in simple bite-sized portions!

I topped these baked brie puff pastry bites with fig jam, but any kind of preserves will work. You can mix up this recipe based on the season. Try strawberry jam on top in the summer and cranberry relish in the winter!

Want to get crazy? Try bacon jam on top! I’ve done it and it’s amazing! To really mix things up, try topping them with a variety of jams, so you and your guests can try different variations of the puff pastry bites!

Slow Cooker Korean BBQ Meatballs

Korean BBQ is all about the marinades and sauces. Luckily for you, I’m sharing the most delicious Korean BBQ sauce recipe, along with this meatball recipe! The sauce is sweet and spicy and really easy to make!

I will put this sauce on anything and everything! I make Korean BBQ Salmon by glazing the sauce over fresh salmon on the grill. You can also slow cook chicken in the sauce for Korean BBQ Chicken Tacos.

Buffalo Chicken Taquitos

Italian 5 Layer Dip

One of my favorite things to do when creating new recipes is to combine two favorite dishes into one amazing new dish!

I was inspired to make this recipe after seeing something similar on a menu in Washington DC at Fat Pete’s BBQ. Their version featured jalapenos, stuffed with cream cheese, topped with a little smokie, then wrapped in bacon.

I decided to go more traditional with my pigs in a blanket and wrap the entire thing in crescent rolls, but I have no doubt that bacon would also be an amazing choice!

The real debate was what to call this little appetizer, the best idea I heard from friends was “Pigs in a Popper”, so cute and perfect for this appetizer mash-up!

Sometimes, we wrap up Chicken Fajita Burritos and take those on our picnic (so very So Cal of us!), other times we just grab a baguette, cheese, crackers and fruit and make it a charcuterie plate picnic and sometimes we invite friends and make it a potluck picnic, which is perfect for bringing these mini pies, also known as picnic pies (fitting!) or hand pies. Basically they’re an individual, hand-held pie that’s easy to transport!

Over the years I’ve turned hundreds of friends and family members on to the deliciousness that is a Shishito Pepper! Ok, maybe that’s a slight exaggeration, but lets just say I’ve introduced a lot of people to these amazing little peppers and everyone has loved them!

What are shishito peppers?

Shishito peppers are a sweet pepper from East Asia, often served as a starter at popular sushi restaurants such as Nobu, Ra and Katsuya. The fun thing about these peppers is that they’re a mild, sweet pepper, yet about one in every ten is spicy!  Surprise!

I call them the “Russian roulette” of peppers because you never know when you’re going to get a spicy one!

Up until a couple of years ago, I was only able to find fresh shishitos at the Asian markets around San Diego. Now I see them at most major grocery stores, including Sprouts and Trader Joe’s.

I seriously can’t get enough of these seriously topped salads, like this Spinach Kale Salad topped with dates, quinoa, pistachios and roasted butternut squash, this Spinach Arugula Salad topped with strawberries, crispy goat cheese, avocados and almonds,  this Cobb Salad topped with Cajun Turkey, tomatoes, pepper jack cheese, onions and avocado, or this Israeli Couscous Salad topped with avocado, cilantro, pomegranate seeds and goat cheese.

See, I was totally serious about all of the things on top of my salads! And this Grilled Romaine Salad is no exception to the rule, it’s actually the most topped salad of them all, piled high with juicy tomatoes, grilled corn, crispy tortilla strips, creamy goat cheese, fresh avocado, protein rich black beans and roasted bell peppers and jalapenos.

While I’ve served this salad as a side dish with Beef Barbacoa Tacos, Chipotle Lime Chicken Fajita Skewers and Cheesy Avocado and Corn Enchiladas, this salad can definitely be a meal on it’s own!

Last week I joined my friends at Cox Communications in Baton Rouge for another “Cox Smart Home” event. I spent the day in the kitchen sharing tips and tricks for how to make your kitchen “smart” by incorporating WiFi enabled devices and appliances into your cooking.

One of the WiFi enabled devices in the smart home kitchen was the Anova WiFi enabled sous vide. I used this device at past events to make Steak Crostini‘s to share with guests of the event, but this time I decided to switch things up!

Since it is football season in Baton Rouge, I decided to serve some of my favorite game day recipes, like Slow Cooker Green Chili Queso Dip and Football Shaped Nutella Rice Krispie Treats. I then decided to make sliders in the sous vide, because they’re perfect for tailgating! Prep the sliders and toss them in the sous vide, remove them from the sous vide, take them to the tailgate, then give them a quick sear on the grill and you’ve got the most delicious and juicy sliders you’ve ever had in your life!

I went to pick up a tub of this delicious sauce last week to top my Grilled Veggie Green Buddha Bowls and there was none to be found. It’s slot in the refrigerator section wasn’t even there anymore. Could this be another delicious Trader Joe’s product gone into retirement? I don’t know, but just in case, I’m now prepared to make my own at home!

Easter is just a couple of weeks away and as I thought about new recipes for the holiday, all I kept thinking about was making a spring version of my very popular Butternut Squash Bruschetta Recipe!

That bruschetta appetizer is a HUGE HIT around the fall holidays, so I knew I had to make a spring version for Easer.

I decided to roast up beets instead of butternut squash, and toss in fresh basil instead of sage. Instead of ricotta, I used goat cheese (because I love the way it pairs with beets!) but I kept the most important piece of the bruschetta in tact, the almighty balsamic reduction drizzle at the end that adds a touch of sweetness and a beautiful final presentation!

When I was home over the holidays, my Dad was making cheese dip (Velvetta + Rotel, an Oklahoma staple when eating Tex-Mex!), he reached in the refrigerator to grab a tupperware container of rotel and he accidentally grabbed the tupperware of leftover bruschetta.

He realized before he actually added it to the bowl of Velvetta, but then I got an idea. What if I made an Italian version of “cheese dip” with bruschetta instead of Rotel and a combination of cream cheese and mozzarella instead of Velvetta?

It’s day three of “Thanksgiving Week” on the blog and to say I’m a big fan of sweet potatoes would be a total understatement. Although this wasn’t always the case.

Growing up in “meat and potatoes land”, AKA Oklahoma, I pretty much stuck with the good ‘ol russet potato. Baked, fried, mashed, anyway it was cooked I liked it, but sweet potatoes were something I just wasn’t into. This was until I got older, and much, much wiser and realized how amazing they are!

Now, one of my favorite ways to eat sweet potatoes are sweet potato skins. I’ve filled them with Turkey Chili for game day and last Thanksgiving I filled them with Sage Pesto and Bacon, YUM!

Vegetables in Ancho Chili Dipping Sauce

The Veggies with Ancho Chili Sauce paired perfectly with the Mini Tacos and Jicama Chips with Mango Salsa that were also served at the party.

Altogether, Chef Fernanda put together a delicious spread of hors d’oeuvres!

I re-created Fernanda’s dish at home so I could share the recipe with all of you!

Grilled Vegetables with Ancho Chili Sauce Ingredients

Ancho Chili Sauce Ingredients

  • 4 dried ancho chilies
  • 2 habanero peppers
  • 1 tbsp sriracha
  • 1 cup ketchup
  • 1 tsp paprika
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • 1 cup sour cream
  • 1 cup ancho chili water

Serve with

  • 4-6 carrots (cut into matchsticks)
  • 2 zucchinis (cut into matchsticks)
  • 1 cup heirloom cherry tomatoes

Begin by slicing off the tops of the ancho chilies and removing the seeds. Next, tear the ancho chilies in large strips.

Ancho Chilies

Boil a small pot of water, then add the ancho chili strips and remove the water from the heat.

Cooking with Ancho Chilies

Allow the chilies to soak in the water for 20-30 minutes.

In the meantime roast the habaneros and grill the carrots and zucchini over medium heat. The carrots should grill for 15-20 minutes, while the zucchini only needs 10-15 minutes on the grill.

Grilled Vegetable Recipe

Once the ancho chilies are soaked and the habaneros are roasted, remove the ancho chilies from the water, reserving the soaking water.

Ancho Chili Sauce Recipe

Peel and de-seed the habaneros, then add both chili peppers to a blender with the sriracha, ketchup, paprika, salt and pepper.

Blend for 15-20 seconds.

Add the sour cream and 1 cup of the reserved ancho chili water. Blend well.

At this time, the carrots and zucchini should be all grilled up. Prepare the tomatoes by skewering them on a toothpick.

Pour the ancho chili sauce in small cups or ramekins, then place the vegetables in the cups.

Today is the day the blog turns 2!  I’m so excited to toast champagne, chow down on delicious hors d’oeuvres and take pictures with fun photo props!

Chef Fernanda has created some delicious and refreshing treats for the party, including the Mini Tacos I shared on Tuesday and these light jicama chips with mango salsa!

I re-created this dish at home as a great appetizer for dinner last night!

Ingredients

  • 2 cups mango salsa
  • 1 medium jicama (sliced into chips)
  • 2 tbsp sriracha
  • 2 tbsp fresh cilantro

Begin by peeling and slicing a medium size jicama into app. 24 “chips”.  I used a small pastry cutter to get perfectly round chips.

Put a small dollop of sriracha in the middle of each jicama chip.
