Pomegranate Mint Margarita

This Pomegranate Mint Margarita Recipe is a delicious combination of light, tart and refreshing. It’s perfect for Taco Tuesday, Cinco De Mayo or summer BBQ’s!
A week from today is Cinco De Mayo. It’s one of my favorite holidays to celebrate, because well tacos and margaritas, yes please!
I’ve been busting out a lot of new taco recipes lately, Korean BBQ Chicken, Tacos Al Pastor and Beef Barbacoa, but it’s been a while since I created a new margarita recipe, so I figured that it was about time!
I love mojitos and I love margaritas so I decided to throw a little mint in my margarita to give it that “mojito feel”! I’m also not a big fan of super sweet drinks, so instead of simple syrup, I added Pomegranate Italian Soda.
The result was a bubbly, slightly tart, light and refreshing margarita that I could sit out on the patio and sip all day! And I did! 😉
Ingredients
- 2 oz tequila
- 1 oz lime juice
- 1 fresh mint sprig
- 3 oz Pomegranate Italian Soda
- ice cubes
Instructions
Add the tequila, lime juice and mint sprig to a glass and muddle the mint.
Add the ice, then top with the pomegranate soda and serve.
Feel free to add a few pomegranate seeds if you’re feeling fancy! This post will show you how to cut a pomegranate and easily remove the seeds!

Instructions

- Add the ice cubes, then top with the pomegranate soda and serve.
