Pesto Bacon and Egg Breakfast Sandwich Recipe

My mornings usually go a little something like this, open the fridge, figure out what’s in the fridge that I can toss in with my eggs, then prepare some kind of scramble, breakfast sandwich or breakfast burrito.

On one fateful morning, I saw basil pesto sitting in the fridge and decided to dollop it on top of my morning scramble, from then on, I was hooked!

Pesto + eggs = one of the most delicious combos ever!

One of my favorite things about this breakfast sandwich is that it only takes about 15 minutes to make and will fuel you up for the day ahead!

I love this sandwich on King’s Hawaiian Sweet Sliced Bread because the slices are nice and thick which holds all of the delicious ingredients in the middle!

Pesto Bacon and Egg Breakfast Sandwich Ingredients

Ingredients

  • 3 slices bacon
  • 2 eggs
  • 2 tbsp milk
  • ½ tsp oregano
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 2 slices King’s Hawaiian Sweet Sliced Bread
  • 2 tbsp basil pesto
  • ¼ cup mozzarella cheese (shredded)

Place a large skillet on the stove over medium-high heat. Add the bacon and cook for 6-8 minutes per side, then flip (depending on desired level of crispiness.)

Remove from the skillet and place on paper towels to drain the grease.

Add the eggs, milk, oregano, salt and pepper to a mixing bowl and whisk together.

Heat a medium skillet over medium-high heat. When hot, add the eggs and scramble.

Toast the two slices of Kings Hawaiian Bread. Spread 1 tbsp of pesto on one side of each slice.

Break the bacon slices in half, then stack the bacon on top of the pesto on one slice of bread.

Add the scrambled eggs on top of the bacon, then the shredded mozzarella. Top with the remaining slice of toast with pesto.

Voila! Such a delicious way to start the day!
