Caribbean Jerk Chicken & Pork Meatballs are served with grilled pineapple & bell peppers & topped with Honey Lime Dressing for a super flavorful dish!
I was excited by the idea of Caribbean Jerk Chicken & Pork Meatballs, but the actual result was even better than I imagined!
If you haven’t tried Caribbean Jerk Seasoning before, it’s a Jamaican hot spice mixture, generally rubbed on pork or chicken. In this meatball recipe I combined both pork and chicken with a Jamaican Jerk Seasoning Paste that I have absolutely fallen in love with!
You can grab a jar of the Jamaican Jerk Seasoning Paste on Amazon, (seriously, what did we do before Amazon Prime?!) or you can usually find a dry Jerk seasoning blend at most major grocery stores.
I tried this recipe twice, both with a dry Jerk seasoning blend I found at the grocery store, and the Jamaican Jerk Seasoning Paste. Both turned out great, but the boyfriend and I both preferred the flavor of the Jamaican Jerk Seasoning Paste.
- 1 cup Honey Lime Dressing (←click link for recipe)
- 1 tbsp olive oil
- 1 cup diced onions
- 1 lb ground chicken
- 1 lb ground pork
- ½ cup breadcrumbs
- 2 large eggs
- 2 tbsp Jamaican Jerk Seasoning Paste
- ½ pineapple (cubed)
- 1 green bell pepper (sliced into 1” squares)
Begin by preparing the honey lime dressing (recipe can be found through the link, I promise it’s super simple!)
Add the olive oil to a large skillet over medium-high heat, cook the diced onions 3-5 minutes.
Add the cooked onions, ground chicken, ground pork, breadcrumbs, eggs and jerk seasoning to a large bowl.
Use your hands to combine all of the ingredients, then form into 1 ½-2 inch diameter meatballs. This should make 20-25 meatballs.
Skewer three pieces of bell pepper and pineapple onto 8 skewers, alternating pineapple, then bell pepper.
Heat a grill over medium heat. Add the pineapple bell pepper skewers and meatballs to the grill.
Grill the meatballs and pineapple bell pepper skewers for 5 minutes, flip both and grill for an additional 5-7 minutes.
Remove from the grill and serve immediately.
The meatballs can then be added to the skewers and served like so ↓
Or simply serve the meatballs with the grilled skewers of pineapple & bell pepper on the side.
Drizzle the honey lime dressing over the meatballs, or serve on the side.
This is one of those O-M-G, flavor explosion in your mouth kind of recipes!
From the jerk chicken & pork meatballs, to the juicy grilled pineapple, to the sweet & zesty honey lime dressing, it’s seriously amazing!
