Man, oh man, the last month has been absolutely insane! I started the moving process at the beginning of August and after 3 weeks I was totally moved-in. I’m now officially living in my new little beach house with the worlds best boyfriend! (I might be slightly biased! 😉 )
Of course, two days later was the boyfriends birthday, so that entire weekend was spent at Dave Matthews Band Concerts, steak dinners, country bars and beach picnics!
Two days after that, I was cooking and Snapchatting live from the Cox Smart Home event. It was a super cool event showing how to use their Gigablast High Speed Internet throughout your home using smart appliances.
I was, of course, using their internet to post live from the event. I was also feeding the attendees delicious Nutella Chocolate Chip Cookies, Bacon Wrapped Dates, Fig & Brie Puff Pastry Bites and Antipasto Skewers.
Once I wrapped that event up, two days later I was hanging out on San Diego 6 News sharing my favorite recipes for game day!
Then it was Labor Day weekend and college football of course!
So now, finally this week, I’m back in the kitchen cooking up new recipes in my new kitchen! This new kitchen also happens to be the worlds smallest kitchen! (Y’all pray for me for the next 6 months while I cook in this teeny tiny kitchen while we look for a house to buy!)
With a new smaller kitchen, I’m trying to keep the dishes to a minimum. This means more One Pot Dishes than ever coming your way, starting with this scrumptious One Pot Sweet & Sour Chicken Fried Rice!
These two Chinese food favorites come together perfectly in just 20 minutes for a new fun fusion recipe that the whole family will love!
Sweet & Sour Chicken Fried Rice Ingredients
- ¼ cup soy sauce (tamari for gluten free)
- ¼ cup ketchup
- 2 tbsp white wine vinegar
- 2 tbsp sweet chili sauce
- ¼ cup honey
- ½ tsp red pepper flakes
- 1 tbsp fresh ginger (grated)
- ¼ cup pineapple juice
- 1 tbsp sesame oil
- 1 cup onion (diced)
- 1 cup bell pepper (diced)
- 4 cloves garlic (minced)
- 1 lb boneless, skinless chicken breasts (diced)
- ½ cup pineapple (diced)
- 3 cups cooked rice*
*If you don’t already have cooked rice in the refrigerator, remember to cook the rice before starting the recipe.
Sweet & Sour Chicken Fried Rice Instructions
In a medium bowl, combine the soy sauce, ketchup, white wine vinegar, sweet chili sauce, honey, red pepper flakes, fresh ginger, and pineapple juice. Set aside.
Pour the sesame oil in a large skillet or wok on the stove over medium-high heat.
Add the onion and bell pepper, cook 2-3 minutes, add the garlic and chicken, cook for an additional 5-6 minutes.
Add the pineapple and sweet and sour sauce. Simmer to reduce the sauce down slightly for 3-4 minutes, then add the rice and cook for an additional 3-4 minutes.
Chow down on a big bowl (or two!) for dinner! Don’t forget to save some for leftovers, because we all know that chicken fried rice makes the best leftovers ever!
That is a proven fact, right? If you google best leftovers ever, a picture of chicken fried rice shows up at the top, right? Maybe? Actually the first picture that comes up is a leftover turkey sandwich. Google, come on, Chicken Fried Rice definitely wins over a turkey sandwich!
Okay excuse me while I go eat some of these leftovers right now because I’ve gotten myself all amped up on them while typing this! 😉
Sweet & Sour Chicken Fried Rice
Ingredients
- ¼ cup soy sauce, tamari for gluten free
- ¼ cup ketchup

I used to get a dish similar to this at a diner near Los Angeles. They haven’t served it for a very long time, so I searched to reproduce the taste. This recipe is very close, if not identical. I increased the amount of veggies and pineapple, but followed the recipe pretty close. Next time I’ll halve or even quarter the red pepper flakes – it was a bit too spicy. Fine for me but ruined it for my wife. The restaurant version served this in individual cast iron dishes, served scorching hot. This caused some of the sauce and rice to caramelize on the bottom- sweet and crunchy. I tried to reproduce that in my pan by turning up the heat for a couple extra minutes at the end. It worked (and was delicious) but I was worried about burning it or having it stick permanently to my pan so I didn’t let that go too far. So I may yet try again to reproduce the whole experience.
