One Pot Buffalo Chicken Cheesy Tortellini

I’ve been on a real buffalo sauce kick lately! From Buffalo Frito Chili Pie to Buffalo Shrimp Tacos to this scrumptious Buffalo Chicken Cheesy Tortellini, I just can’t get enough of my favorite sauce lately!
Buffalo Chicken Cheesy Penne is the most popular recipe on the blog and today I decided to give it a little twist by subbing the penne with cheesy tortellini (because more cheese, yes please!)
Needless to say, the combination of cheese, pasta and buffalo sauce is amazing!
I left town for less than 24 hours and came back to an empty leftover container. Kurt had literally eaten all of the leftovers!
I was a little sad there was none left for me, but happy he loved it so much that he couldn’t stop eating it! 😉
This easy 20 minute one pot recipe will definitely be going into regular rotation at our house!
Buffalo Chicken Cheesy Tortellini Ingredients
- 1 tbsp butter
- 1 lb chicken breasts (cut into 1 inch pieces)
- 1 cup buffalo sauce (divided)
- 20 oz refrigerated cheese tortellini
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp kosher salt
- 2 cups chicken broth
- 2 oz cream cheese (cubed)
- ½ cup cheddar cheese (shredded)
Buffalo Chicken Cheesy Tortellini Instructions
Add the butter to a large skillet over medium heat.
Toss the cubed chicken with ½ cup buffalo sauce.
Once the butter is melted, add the chicken to the skillet.
Cook 4-5 minutes, then add the tortellini to the skillet with the paprika, garlic powder and salt. Pour the remaining ½ cup buffalo sauce and chicken broth into the skillet and bring to a boil. Cover, reduce heat and simmer 7-8 minutes.
Remove the lid and add the cream cheese and cheddar cheese. Stir to combine, and allow the cheese to melt in for 3-4 minutes.
Top with a few diced green onions if you’d like!

One Pot Buffalo Chicken Cheesy Tortellini
Ingredients

This is soup. 2 cups of broth simmered off under a cover in 8 minutes? Plus a cup of sauce?
Hi Thomas, I’m sorry the recipe did not work for you. I tested this recipe several times before sharing it on the blog and have made it several times since posting it and never had any issues. The broth and sauce that is left after it’s simmered gets thickened with the cheeses to make the sauce for the dish.
