Bacon Maple Muffins with Brown Sugar Crumble

Bacon Maple Muffins are the ultimate sweet and salty breakfast pastry! They’re topped with a brown sugar crumble and easy to make in just 30 minutes. They’re a great on-the-go breakfast or perfect for a brunch party!
My favorite thing about these muffins is that they’re both sweet and salty. The muffins themselves are not too sweet, but the brown sugar crumble on top adds a layer of sweetness.
The crispy bacon in the middle adds the salty component and when all of these things come together, it creates one mouthwatering muffin!
I’ve been making these muffins since 2012 and they’re always a hit. My family loves them and friends can’t get enough!
I love to make a double batch, box them up, then deliver them to neighbors and friends. They make a great holiday gift, if you want to switch up the traditional cookie routine!

Step by step instructions
- Make the muffin batter.
- Combine flour, baking powder and salt in a small bowl.
- In a large bowl, whisk vegetable oil, milk and an egg together.
- Add maple syrup and stir to combine.
- Add the dry ingredients and stir until all of the ingredients are combined thoroughly, then mix in cooked, crumbled bacon.
- Quick Tip! Follow this blog post for how to cook bacon in the oven to make crispy bacon every time, perfect for adding to these muffins! I’ve found that approximately 6 slices of bacon will equal ½ cup cooked, crumbled bacon, which is what you need for this recipe. If you want to switch things up, add candied bacon to the muffins!
- Prepare the brown sugar crumble.
- Combine brown sugar, flour and ground cinnamon in a small mixing bowl.
- Add cold, cubed butter and use your hands to mix into a coarse crumble.
- Prepare the muffins.
- Preheat the oven to 350°F.
- Line a muffin tin with liners or spray the pan with cooking spray.
- Spoon the muffin batter into the greased or paper lined muffin pan, filling each of the 12 cups approximately ¾ full.
- Sprinkle the brown sugar crumble over each of the muffins.
- Place in the oven and bake for 18 minutes, or until a toothpick inserted in the muffin center comes out clean.
- These muffins are delicious served warm fresh out of the oven or at room temperature.
- Quick tip! If you want to get that fresh-out-of-the-oven taste every time you eat one of these muffins, just pop them in the microwave for 30 seconds before eating.
How do you make mini muffins?
These maple bacon muffins are easy to make into mini muffins and they might just be the cutest little bite-sized breakfast treat ever!
Simply use a 24 cup mini muffin tin, either lined with mini muffin liners or sprayed with cooking spray. Fill the muffin cups ¾ full with batter, then top with the brown sugar crumble, just like you would the full size muffins. Bake the mini muffins for 15 minutes, instead of 18 minutes. Remove from the oven and transfer to a wire rack to cool.
How do you store them?
Once baked, these muffins should be stored in an airtight container at room temperature and eaten within 5 days.

Ingredients
Bacon Maple Muffins
- 2 cups flour
- 3 tsp baking powder
- ½ tsp salt
- ½ cup vegetable oil
- ½ cup milk
- 1 egg
- ⅔ cup maple syrup
- ½ cup cooked, crumbled bacon
Brown Sugar Crumble
- ⅓ cup brown sugar
- 2 tbsp flour
- ½ tsp cinnamon
- 1 tbsp butter, cold, cubed
Instructions
- Preheat the oven to 350°F.
- Combine 2 cups flour, baking powder and salt in a small bowl.
- Combine the vegetable oil, milk and egg in a large mixing bowl.
- Whisk together, then add the maple syrup.
- Add in the flour mixture and combine well.
- Add the bacon to the batter.
- Mix the bacon in, then spoon the batter into paper lined muffin tins.
- Make the brown sugar crumble by combining the brown sugar, 2 tbsp flour and cinnamon in a small mixing bowl.
- Fold in the butter, then use your hands to mix into a coarse crumble.
- Sprinkle the brown sugar crumble on top of the muffins.
- Place in the oven and bake for 18 minutes.
Notes
- Bacon: For this recipe, you can purchase cooked bacon crumbles at the grocery store or cook the bacon at home. If cooking the bacon at home, I recommend placing the bacon on a wire rack on top of a foil-lined baking sheet in the oven at 400°F for 15-20 minutes. I’ve found that approximately 6 slices of bacon will equal ½ cup cooked, crumbled bacon, which is what you need for this recipe.
- Mini Muffins: To make these into mini muffins, line a 24 cup mini muffin tin with mini muffin liners, then fill ¾ full with batter, then top with the brown sugar crumble, just like you would the full size muffins. Bake the mini muffins for 15 minutes, instead of 18 minutes.

It’s been 18 minutes at 350 F but they look not done. I added another 10 minutes still a little bit wet so total baking time is 30 minutes for me.
