Maple Candied Bacon Bread Pudding Muffins

Maple candied bacon adds a scrumptious sweet and salty flavor to these delicious bread pudding muffins, easy to make in under an hour!
One of the benefits of being a food blogger is that you can easily leverage delicious food in exchange for things. Things such as an early Saturday morning ride to a friends birthday party in exchange for delicious bread pudding muffins!
A couple of weeks ago one of my friends decided to host her birthday pool party at a casino almost an hour away. I knew three guy friends in my area were leaving early Saturday morning to drive up, and I also knew that if I bribed them with “delicious bacon treats” (as I so eloquently put in my group text to them!) that they would probably swoop by and pick me up!
Needless to say, I was right! As soon as the boys heard bacon, they were all in, so I went into my kitchen to decide what exactly these “delicious bacon treats” would entail.
I knew that it had to be a dish that they could eat in the car on the drive up so I thought, muffins. I then thought candied bacon, because well I’m kind of obsessed with candied bacon these days (see Sriracha Candied Bacon Grilled Cheese, yum!)
I then saw a delicious package of King’s Hawaiian Rolls sitting on my counter and the idea came together, Maple Candied Bacon Bread Pudding Muffins. Yes!

Maple Candied Bacon Bread Pudding Muffins Ingredients
- 10 bacon slices
- ¾ cup maple syrup
- 2 eggs
- 1 ½ cups milk
- 1 tsp vanilla
- 1 tsp cinnamon
- 12 hawaiian rolls (quartered)
Maple Candied Bacon Bread Pudding Muffins Instructions
Preheat the oven to 400°F.
Place the bacon on a baking rack on top of a foil-lined baking sheet, drizzle ¼ cup of maple syrup across the slices of bacon.
Place in the oven to cook for 12 minutes. Remove from the oven, flip the bacon and drizzle another ¼ cup of maple syrup across the slices of bacon. Place back into the oven to cook for another 12 minutes.
Remove the bacon from the oven, place on a cutting board and set aside. Turn the heat on the oven down to 375°F.
In a large bowl, whisk the eggs, milk, vanilla, cinnamon and remaining ¼ cup maple syrup together. Add the quartered Hawaiian rolls and toss to coat.
Chop the bacon.
Add ¾ of the bacon to the bread pudding and toss to combine.
Place the bread pudding in silicone or paper muffin liners in a muffin tin.
Place in the oven and bake for 25-30 minutes. Remove from the oven and top with the remaining ¼ cup of chopped candied bacon.
The crispy candied bacon adds a perfectly crispy, sweet and salty element to these muffins!

Ingredients

- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 12 hawaiian rolls, quartered
Instructions
