Italian Turkey & Egg Breakfast Skillet

Turkey sausage, fresh veggies and eggs are combined in this gluten free Italian Breakfast Skillet recipe, made in one pan in 20 minutes!
Breakfast is not only the most important meal of the day, it also happens to be my favorite meal of the day. The problem is, I don’t always make time to cook and eat breakfast every day.
You too? That’s kind of what I thought, so today I’m sharing a breakfast skillet recipe that is so quick and easy to whip up, you’ll have no excuse for skipping the most important meal of the day!
Ingredients
- Olive oil
- Onion
- Garlic cloves
- Turkey breakfast sausage
- Diced tomatoes
- Basil pesto
- Eggs
- Parmesan cheese
Instructions
Add the olive oil to a skillet on the stove over medium-high heat. Add onion, saute 4-5 minutes, add minced garlic, saute for an additional minute. Add turkey sausage and cook through, 6-8 minutes.
Add the diced tomatoes and basil pesto, mix everything together.
Crack the eggs on top.
Cover and cook 6-8 minutes. Remove the lid, sprinkle with cheese and serve.

- 1 pound turkey breakfast sausage
- 2 cups tomatoes, diced
- ¼ cup basil pesto
- 6 large eggs
- ¼ cup parmesan cheese, grated
Instructions
- Add the olive oil to a large skillet on the stove over medium-high heat.
- Add the onion, cook 4-5 minutes, add the garlic, cook for an additional minute.
- Add the turkey sausage and cook through, 6-8 minutes.
- Add the diced tomatoes and basil pesto, mix everything together.
- Crack the eggs on top. Cover and cook for 6-8 minutes.

This looks like my kind of breakfast! I love eggs and ground turkey with veggies layered with cheese! I’ve never tried just putting the eggs on top and covering it so I’m stoked to try it out. I recently got a poacher and it’s my favorite $5 purchase haha.
