Easy One Pot Beef Stroganoff

This made-from-scratch Beef Stroganoff recipe is so easy to make, it only requires one pot and 40 minutes to prepare, for one delicious dinner!
My love for one pot meals runs deep!
I love the delicious flavors that develop from cooking everything together, and even more, I love the fact that you only have to wash one pot when the meal is over!
Last week I was really craving mushrooms, and I had a pound of ground beef in the fridge, so I thought, what if I make a creamy mushroom beef pasta dish, basically beef stroganoff!
I combined the homemade version of cream of mushroom soup that I made for this Mushroom Brussels Sprout Casserole, (don’t worry, it’s super easy and way tastier than the stuff in the can!) with the ground beef and pasta in one pot.
Kurt and I finished off the entire pan, using a baguette to literally get every last bit of sauce out of the pan, it was THAT GOOD!
I seriously get so giddy with excitement when a new recipe that is so easy is also so tasty! This is definitely going on the regular quick & easy dinner menu!

I didn’t have fresh mushrooms so I used canned (yuck) and this meal was STILL great!!! I also used mostaccioli pasta. My husband loved it. Going into the regular rotation! Thanks!
So happy to hear that you all enjoyed it Jana!
When do I add the parsley?
Hi Brechelle, it goes on top as a garnish at the end with the parmesan cheese. I apologize for that oversight in the recipe instructions and have updated them now. Thanks so much! Enjoy!
This is a fabulous recipe, and actually tastes even better with turkey and chicken broth.
What is half-and-half?
Half and half is half cream, half milk
