Chinese Orange Glazed Salmon Foil Dinner

The best Chinese orange sauce is easy to prepare and brush over Orange Glazed Salmon with colorful vegetables for a healthy, simple, 29 minute foil dinner recipe!

One of my favorite things about living in San Diego is the abundance of fresh seafood, right in my backyard!
I recently moved from downtown to the beach and just up the hill from my new home is a place I love called Catalina Offshore. They provide seafood for all of the best restaurants in San Diego. They’re also open to the public, so you can go in and buy the best seafood to serve at home in your own kitchen!
I went in the other day on a mission to get some delicious salmon and came out with the most buttery, melt-in-your-mouth salmon I’ve ever tasted!
This salmon is what I used in this Orange Glazed Salmon recipe. This recipe was inspired by two of my favorite recipes for Chinese Orange Chicken and Pesto Baked Salmon Foil Dinners.
I could drink the orange sauce on the Chinese Orange Chicken, which is why I had to find another recipe to use it in! And I love foil dinners because they’re easy to make, and SO easy to clean up.
Ingredients
- ¼ cup fresh squeezed orange juice
- 1 teaspoon orange zest
- 2 tablespoons white wine vinegar
- 2 tablespoons soy sauce (tamari for gluten free)
- 1 tsp sriracha
- 2 cloves garlic (crushed)
- ¼ tsp ground ginger
- ¼ cup brown sugar
- 1 lb salmon (sliced into 2 fillets)
- 1 red bell pepper (sliced)
- 1 cup carrots (sliced diagonally)
- 1 cup sugar snap peas
- 1 cup broccoli florets
- 4 cloves garlic (sliced)
- 1 cup onion (sliced)
Instructions
Preheat the oven to 400°F.
Combine the orange juice, orange zest, white wine vinegar, soy sauce, sriracha, garlic, ground ginger and brown sugar in a small saucepan on the stove over medium-high heat. Once the sauce starts to bubble, let it simmer for 3-5 minutes. Remove from the heat and set aside.
Place the salmon in two large foil baskets on a baking sheet.
Scatter the bell pepper, carrots, peas, broccoli, garlic and onion around each piece of salmon.
Brush half of the orange sauce on the salmon and over the veggies. Reserve the remaining orange sauce for later.
Place in the oven and bake for 10 minutes. Remove from the oven stir the vegetables, then brush the remaining orange sauce on the salmon and over the vegetables.
Place back into the oven for an additional 5-7 minutes.
Remove from the oven and garnish with sesame seeds and diced green onions if you’d like!
Roasting the veggies in the orange sauce gives them so much flavor! They come out with the perfect slightly crispy texture and the salmon seriously melts in your mouth!
