This deconstructed recipe for Beef Enchiladas with creamy Sriracha sauce is made in one skillet in only 29 minutes, perfect for busy weeknight dinners!
Today on the blog I’m combining two of my favorite things, beef enchiladas and one pot meals!
This deconstructed version of an enchilada might not look as pretty as it’s perfectly rolled up counterpart, but the entire dish is made in only one skillet and in 29 minutes. You just can’t beat that!
Crock Pot Brownies are an easy way to bake up a delicious dessert without the use of an oven, throw in a Pumpkin Cheesecake Swirl for a festive fall treat!
Tomorrow, tomorrow, fall is finally here tomorrow!
You guessed it, the first day of fall is… tomorrow, but I won’t lie, for the past two weeks I’ve totally been cheating and eating everything apple, pumpkin and squash I could get my hands on!
I also may or may not have also been trying to rock boots, scarves and sweaters even though it’s totally still 80 degrees outside! 😉
What can I say, fall is my favorite time of the year and I couldn’t wait to start sharing all of my favorite fall recipes on Instagram, like Apple Butternut Squash Bruschetta & Pumpkin Chili. As well as introducing new fall favorites on the blog, like these Pumpkin Cheesecake Swirled Crock Pot Brownies!
I mean, what says fall more that pumpkin, baking and a slow cooker!
Kale, corn & tomatoes are combined into a tasty succotash, served over warm goat cheese & juicy chicken in this delicious recipe!
A couple of weeks ago, I received my first delivery from Terra’s Kitchen, a clever website where you choose your favorite innovative and healthy recipes from their selection, then they chop and deliver all of the ingredients for the recipes in a climate-controlled vessel.
This 5 minute Salmon Taco Rice Bowl recipe is a delicious, wholesome and easy lunch idea!
Today’s post is sponsored by Minute Rice & Chicken of the Sea.
While it’s true that I have only ever worked a “9-5” corporate job for three months of my life, I did spend a lot of time in college, like 7 years.
During my time in college, I spent long days on campus and got so sick of eating at the same sandwich shop every day. Bringing my lunch meant, basically the same thing, bringing a sandwich or salad, every day!
I was always on the look out for something new, delicious and nutritious that I could bring to school with me, and make in just a couple of minutes, only using a microwave.
Now, I may not be in school anymore, but there are still those days where I need a go-to 5 minute lunch option when I’m too busy to cook anything and that’s where my friends at Minute® Ready to Serve Rice and Chicken of the Sea come in!
Both Minute Ready To Serve Rice cups and Chicken of the Sea Salmon pouches are wholesome, delicious ways to spice up your lunch routine!
Two delicious Chinese recipes come together in this easy One Pot Sweet and Sour Chicken Fried Rice Recipe that’s made in only 20 minutes!
Man, oh man, the last month has been absolutely insane! I started the moving process at the beginning of August and after 3 weeks I was totally moved-in. I’m now officially living in my new little beach house with the worlds best boyfriend! (I might be slightly biased! 😉 )
Of course, two days later was the boyfriends birthday, so that entire weekend was spent at Dave Matthews Band Concerts, steak dinners, country bars and beach picnics!
Two days after that, I was cooking and Snapchatting live from the Cox Smart Home event. It was a super cool event showing how to use their Gigablast High Speed Internet throughout your home using smart appliances.
Once I wrapped that event up, two days later I was hanging out on San Diego 6 News sharing my favorite recipes for game day!
Then it was Labor Day weekend and college football of course!
So now, finally this week, I’m back in the kitchen cooking up new recipes in my new kitchen! This new kitchen also happens to be the worlds smallest kitchen! (Y’all pray for me for the next 6 months while I cook in this teeny tiny kitchen while we look for a house to buy!)
With a new smaller kitchen, I’m trying to keep the dishes to a minimum. This means more One Pot Dishes than ever coming your way, starting with this scrumptious One Pot Sweet & Sour Chicken Fried Rice!
