We’re big fans of fajitas at our house. In fact, when I met my husband I think that fajitas were one of his five major food groups.

Now, I’ve made fajitas just about every way possible. I’ve made them on the stove, on the grill, in an Instant Pot and in a Crock Pot, but making them in the air fryer might just be my favorite method yet!

Here’s why I love these air fryer fajitas, and I know that you will too.

  1. They’re so flavorful! Using chicken thighs, instead of chicken breasts, automatically makes these fajitas extra flavorful. They’re then tossed with my famous homemade fajita seasoning which adds just a hint of spice and so much flavor to the chicken. Mix in the flavor of fresh bell peppers and onions and you have a dish that tastes so delicious!
  2. They’re easy to make! The entire meal cooks in the air fryer, so cooking and clean-up are a breeze. The air fryer preheats while you season the chicken. The chicken and veggies cook separately, so they cook evenly, but still the entire meal is made in under 30 minutes, with only 5 minutes of hands-on time.
  3. You can reheat the leftovers in the air fryer for another delicious meal. This recipe makes 6 servings. After eating traditional fajitas the first time I made them, the next day I heated up the chicken and veggies in the air fryer then made them into burrito bowls for lunch. Just as delicious and such an easy leftover meal!

Ingredients

Here I explain the best ingredients for this air fryer chicken fajitas recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.

  • Chicken thighs – you’ll want boneless, skinless chicken thighs for this recipe. They will give you the best flavor and a juicy, tender texture. If you love Chipotle chicken, then you’re probably going to love this recipe with chicken thighs, since that’s what they use at the fast-casual chain. You can also use boneless, skinless chicken breasts if you prefer something lighter.
  • Fresh lime juice
  • Olive oil (or avocado oil)
  • Fajita seasoning – click the link to grab my easy homemade seasoning mix with no sugar, gluten, or preservatives! You can mix it up in just 5 minutes with pantry staple ingredients like salt, garlic powder, onion powder, chili powder, paprika, and ground cumin. It will stay good for up to 6 months, so you can make it ahead of time and store it in your pantry until you’re ready to make this recipe.
  • Red onion
  • Bell peppers – feel free to use any color of bell peppers. You’ll need two bell peppers for this recipe, so I used a combination of one red bell pepper and one green bell pepper, but you can also use an orange or yellow bell pepper.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions, scroll to the recipe card at the bottom of this post.

  1. Season the chicken. In a large bowl, toss chicken thighs with olive oil, lime juice and fajita seasoning, until they’re evenly coated on all sides.
  2. Air fry the chicken. Place the seasoned chicken thighs in a single layer in an air fryer basket. Cook at 400°F for 6 minutes. Open the air fryer and flip the chicken thighs. Cook for an additional 6 minutes, or until the internal temperature in the thickest part of the thigh reaches 160°F. The timing may vary depending on the size and thickness of the chicken thighs. If they don’t reach the internal temperature after the initial 12 minutes, air fry for an additional 2-4 minutes. Once they’re fully cooked, remove the chicken thighs from the air fryer and let them rest on a cutting board.
  3. Air fry the veggies. While the chicken is in the air fryer, slice bell peppers and onions then toss them with olive oil and fajita seasoning. After the chicken comes out of the air fryer, add the sliced vegetables to the air fryer basket and cook at 400°F for 10 minutes, opening the air fryer and shaking the veggies halfway through the cooking time.
  4. Slice the chicken thighs. After the chicken has rested for 5 minutes, slice the cooked chicken thighs into strips, while the veggies are in the air fryer. After the cook time is complete for the bell peppers and onions, open the air fryer and toss the sliced chicken in with the cooked vegetables.

  • Preheat an air fryer to 400°F.
  • Pat the chicken thighs dry with a paper towel, then add them to a large bowl. Pour the lime juice and 1 tablespoon olive oil over the thighs and toss until they’re coated.
  • Sprinkle 2 tablespoons fajita seasoning over the thighs and toss to coat them in the seasoning.
  • Place the chicken thighs in an air fryer in a single layer.
  • Air fry at 400°F for 6 minutes. Flip and cook for another 6 minutes, or until the thickest part of the thigh reaches 160°F.
  • While the chicken is cooking, toss the sliced onions and bell peppers with the remaining tablespoon of olive oil and tablespoon fajita seasoning.

  • Add the sliced onions and bell peppers to the air fryer. Cook at 400°F for 10 minutes, shaking halfway through the cooking time.
  • While the peppers and onions are cooking, slice the cooked chicken thighs after they rest for 5 minutes.
  • Toss the cooked peppers, onions and chicken together, then serve immediately.
