My husband gives me a lot of recipe inspiration for the site. He’s a great cook and loves food almost as much as I do! For years, he’s been telling me about these bacon roll-ups that his Mom used to make for parties. He described them as, “white bread, dipped in cream of mushroom soup and wrapped in bacon”. And that’s exactly what they are!

At first I was weary, but after I tried them for the first time, I understood the appeal. And when I made them for a party, just as he said they would, people went crazy for them! How could something so simple be so tasty? Well it’s salty, crunchy, and wrapped up in crispy bacon goodness! I guess the saying is true, everything is better with bacon!

If you’re looking for a super easy appetizer that you can make for under $10 to feed a crowd, this is the recipe you’re looking for!

Ingredients

  • White bread – any brand of basic white bread will work for this recipe.
  • Condensed cream of mushroom soup – you could also use cream of chicken soup, but I like the taste of the mushroom soup, paired with the bacon. I’ve also seen a similar recipe made with cream cheese, so you could trying using a block of softened cream cheese to replace the soup.
  • Bacon – you’ll want regular sliced bacon for this recipe, not thick-sliced bacon.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

  1. Remove the crusts from each piece of bread, then slice each piece in half.
  2. Cut all of the slices of bacon in half. Use a butter knife or cheese spreader to spread cream of mushroom soup on both sides of each piece of bread, then lay it on a half strip of bacon.
  3. Roll the bacon up with the bread, then secure it with a toothpick. Repeat until you’ve made 30 bacon roll ups.
  4. Place the bacon roll ups on a foil-lined baking sheet and into a preheated 425°F oven. Bake for 10 minutes. Remove from the oven, use kitchen tongs to flip the roll ups, then return them to the oven for another 10 minutes, or until the bacon is crispy on the outside. Remove from the oven, transfer to a plate and serve.

If you’d like to add a garnish, feel free to sprinkle on some fresh chopped parsley before serving the roll-ups.

Make ahead and storage tips

You can make the roll ups ahead of time and store them in the fridge for up to 24 hours before baking them.

Once the rolls are cooked, you can reheat them in the oven or in an air fryer. We used an air fryer to reheat these at home, and they were just as good as when they were freshly cooked!

Place them in a single layer in an air fryer basket and cook at 400°F for 4-5 minutes. The roll ups will be hot and the bacon will be crispy!

If you don’t have any air fryer, you can reheat them in the oven. Turn your oven on to 400°F (convection if you have it, this will help crisp up the bacon). Place the roll ups in a single layer on a baking sheet and reheat for 3 minutes, flip and reheat for an additional 3-5 minutes, or until the bacon is hot and crispy.
