There’s nothing better than warm, creamy brie cheese, nestled in a pillow of buttery crescent roll dough, topped with sweet, tart cranberry sauce. It really is the ultimate 3 ingredient appetizer recipe!

It’s got everything, a little sweet, a little savory, and totally delicious! The best part is, they’re so easy to prep in 15 minutes or less. Pop them in the oven for 12 minutes, and in under 30 minutes you have a winning appetizer that everyone will love!

Word to the wise, make a double batch of these if you’re making them for a party. I made the normal batch of two dozen for a dinner party with 8 people, and they were gone in the blink of an eye!

These cranberry brie bites are perfect for Christmas, or holiday parties, but if you want to switch up the flavor for another season, I’ve got plenty of ideas below. You can easily swap out the cranberry sauce with jellies, jams and spreads to change up the flavor based on the time of year.

Ingredients

  • Crescent dough – for this recipe, I like to use crescent dough sheets if I can find them. They’re easier to slice into squares to make the bites. If you can’t find them, no worries, you can use a can of crescent dinner roll dough, then simply press the seams of the dough together to form a solid sheet of dough.
  • Brie cheese – you’ll need an 8 ounce round of brie for this recipe. The brie should be cut into small, bite-sized pieces, about 1/2 inch in size. I recommend leaving the rind on the brie. It’s totally edible and helps hold all of the melty, gooey cheese inside while it bakes. 
  • Cranberry sauce – you’ll want a can of whole berry cranberry sauce for this recipe. This sauce adds a bright color, and sweet, tart flavor on top of the brie. If you want alternatives to the cranberry sauce, jump to the other toppings to try section below.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions, scroll to the recipe card at the bottom of this post.

  1. Slice the crescent roll dough. Spread a sheet of crescent dough out onto a cutting board. Use a sharp knife to slice it into 4 long slices, then slice each long slice into 6 small squares, for a total of 24 small squares of dough.
  2. Add the dough to a mini muffin tin. Spray a mini muffin tin with cooking spray, then place each of the squares of crescent dough in the muffin tin, pressing gently in the middle of each piece of dough.
  3. Add the brie cheese. Dice the block of brie cheese into small pieces, then add a small piece of brie, on top of the crescent dough, in each slot on the mini muffin tin.
  4. Add the cranberry sauce. Spoon approximately 2 teaspoons of cranberry sauce on top of each piece of brie cheese. You want to use enough sauce to cover the cheese.
  5. Bake the brie bites. Place them in a 375°F preheated oven and bake for 12 minutes.

Recipe tips

  • I do not recommend making this recipe ahead of time. Baked brie is the most delicious when it’s fresh out of the oven, warm and gooey! You can go ahead and dice up the brie up to 2 days ahead of time and store it in a zipper bag in the fridge until you’re ready to make the recipe. It only takes 10-15 minutes to assemble, so I promise you’ll have it prepped in no time!
  • You can make this recipe with puff pastry dough, instead of crescent roll dough. Refer to this recipe for Baked Brie Puff Pastry Bites for the full instructions.
  • If you’d like to add nuts to the brie bites, you can top them with a sprinkling of chopped pecans or walnuts before baking. You’ll need about 1/4 cup total chopped nuts to sprinkle over the bites.
  • This recipe makes 2 dozen baked brie bites. You can easily double the recipe by clicking the 2X button in the recipe card below. Other toppings to try

Make brie bites with different flavors for every season! Swap out the cup of cranberry sauce for a cup of any of these jams, jellies, or other toppings.

  • Bacon jam – because bacon and cheese really is a perfect match, I absolutely love this combo!
  • Pepper jelly – if you like a sweet, spicy, cheesy combo, this is the topping for you!

Storage and reheating

If you happen to have any leftovers, (I would be surprised!) but you can store them in an airtight container in the fridge for up to 5 days.

I like to reheat them in an air fryer for the best texture. This is easy to do at 400°F for just 3-4 minutes.

If you don’t have an air fryer available, you can reheat them on a baking sheet in the oven at 350°F for 10-15 minutes, or until the cheese is melted and bubbling again.

Instructions

  • Preheat the oven to 375°F.

  • Remove from oven, move the brie bites to a plate, or cooling rack, and allow them to cool for 5 minutes before serving.
