Candied Bacon Goat Cheese Blueberry Grilled Cheese

With my love of cheese, there was no way I was going to allow National Grilled Cheese Month to end without me posting one grilled cheese recipe the entire month.
I’m going to help you finish National Grilled Cheese Month with a gluten free bang by sharing this delicious, decadent new grilled cheese recipe!
I took gluten free sweet and scrumptious Cinnamon Raisin Bread and sandwiched in brown sugar candied bacon, fresh blueberries and goat cheese for the ultimate in decadent grilled cheese sandwiches!
Ingredients
- 6 slices bacon
- ¼ cup brown sugar
- 6 slices gluten free cinnamon raisin bread
- 3 tbsp butter
- 3 tbsp goat cheese
- ¼ cup fresh blueberries
Preheat the oven to 400°F.
Place the bacon and brown sugar in a plastic bag. Toss to coat.
Lay the bacon strips across a wire rack on top of a baking sheet.
Place in the oven for 20 minutes.
Remove the bacon from the oven and allow to cool for 10 minutes.
Meanwhile, begin preparing the sandwiches. Place ½ tbsp of butter on each side of bread.
Flip the bread and place ½ tbsp of goat cheese on the other side of the bread.
Place 2 strips of bacon on one side of the bread and a few blueberries on the other side.
Sandwich together and place in a skillet over medium heat. Cook for 5 minutes per side or until the bread is browned.
