Chicken Fajita Grilled Burritos

If you love Chipotle burritos, then you’re really going to love these grilled burritos, filled with fajita grilled chicken, veggies and cilantro lime rice!

I have a confession to make, I’m a bit obsessed with grilled burritos!
It’s a burrito, so that already has my attention, then you toss it on the grill to create a deliciously crispy tortilla wrapped around all of the burrito goodness, and bam, you’ve got an awesome grilled burrito!
To keep with the theme of grilling, I filled the burritos with grilled fajita seasoned chicken and grilled peppers and onions. I also added white rice, seasoned with cilantro and lime juice and black beans.
Needless to say, these burritos are filled to the brim with delicious, flavorful ingredients!

Ingredients
- 2 tablespoons olive oil
- 4 tablespoons fresh lime juice (app 2 limes) – divided
- 2 tablespoons fresh cilantro (chopped) – divided
- 2 cloves garlic (minced)
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon sea salt
- 1 pound boneless, skinless chicken breasts
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 1 cup cooked white rice (follow this recipe for cilantro lime rice made in an Instant Pot, rice cooker or on the stove)
- 4 “burrito size” large flour tortillas
- 1 cup pepper jack cheese (shredded)
- 1 can (15 oz) black beans (drained & rinsed)
Instructions
In a medium bowl, combine the olive oil, 2 tablespoons lime juice, 1 tablespoon cilantro, garlic, cumin, chili powder, paprika and sea salt. Add the chicken breasts and marinate for an hour (or up to 8 hours) in the refrigerator.
Slice each bell pepper into four large pieces and slice the onion in large rings.
Heat a grill to medium heat. Add the chicken to the grill, grill for 10-12 minutes per side. About 6 minutes before removing the chicken from the grill, add the bell peppers and onions to the grill and grill for 2-3 minutes per side.
While everything is grilling, heat the white rice in the microwave for 90 seconds, then mix in the remaining 2 tablespoons lime juice and 1 tablespoon cilantro. Set aside.
Remove everything from the grill and place on a cutting board. Remember to leave the grill turned on to medium heat.
Dice the chicken, bell peppers and onions.
In the middle of each tortilla, sprinkle approximately ¼ cup of pepper jack cheese, top the cheese with the cilantro lime rice, black beans and grilled chicken, peppers and onions.
Fold the ends over, then roll up the burritos tightly.
Place seam side down on the grill. Grill for 2 minutes per side.
Remove from the grill and serve with sour cream, guacamole, salsa, pico de gallo, hot sauce or a combination of your favorite burrito toppings!
I loaded mine up with guacamole and pico de gallo and it was DELISH!
But seriously, I’ve eaten these grilled burritos for my last 3 meals, they’re really DELISH!
