No Bake Protein Bites

These easy homemade No Bake Protein Bites are loaded with healthy ingredients such as buckwheat groats, almonds and dates, perfect for a post workout snack.
Last week I hosted a cooking class at Beaming Juice and Superfood Bar in Del Mar.
This place is all about raw, vegan and gluten free food, so I created a couple of new and delicious recipes to match their mission.
First I prepared these scrumptious No Bake Protein Bites, followed by a Banana Date Protein Shake and a Superfood Pumpkin Smoothie.
Ingredients
- 1 cup pitted dates (chopped)
- 1 cup almonds
- 1/2 cup peanut butter (or almond butter)
- 1 tsp vanilla extract
- 2 cups sprouted buckwheat groats
- 1/4 cup honey
- 1/4 cup shredded coconut
- 1/4 cup protein powder
Instructions
Place all ingredients in a food processor.
Blend until ingredients are combined and a sticky ball forms.
Press onto wax paper and roll into 1/2 inch thick sheet.
Use a one inch diameter pastry cutter to cut into bite size pieces.
Chill in the fridge for up to one week. Great for breakfast, a mid-day snack or a post workout protein kick!

- Blend until ingredients are combined and a sticky ball forms.
- Press onto wax paper and roll into 1/2 inch thick sheet.
- Use a one inch diameter pastry cutter to cut into bite size pieces.
- Chill in the fridge for up to one week.
