If you missed “National Grilled Cheese Day” last Wednesday, don’t worry, all of April is “National Grilled Cheese Month”! (Yes, thats a real thing!)
This Prosciutto Provolone Fig Grilled Cheese recipe is just what you need to celebrate this month of cheesy deliciousness! It’s filled with ingredients like blue cheese, fig spread and thinly sliced prosciutto, making it a super flavorful grilled cheese sandwich, that’s also filling enough for lunch or dinner.
It’s sweet, savory and oh-so-delicious!
I actually spent “National Grilled Cheese Day” with my friends at Cox Communications in Phoenix, AZ setting up another awesome “Cox Smart Home” event! In case you missed it, I chatted all about the last event in Gainesville, FL (and shared a delicious meatloaf recipe!) in this post in March.
I also shared a “behind the scenes” look at my Cox Smart Home Kitchen in Phoenix on Facebook Live! While I didn’t whip up a grilled cheese sandwich that day, I did share some cheesy deliciousness with this Green Chili Queso Dip!
- 8 slices sourdough bread
- 4 tbsp butter (softened)
- 10 oz jar fig spread
- 16 slices provolone cheese
- 16 slices prosciutto (app ½ lb)
- 4 oz blue cheese crumbles
- ½ cup fresh arugula
Butter each piece of sourdough bread on one side with about ½ tbsp of butter. On the other side of each piece of bread, spread about 2 tbsp of fig spread. On four of the slices of bread, place two slices of provolone cheese, then two slices of prosciutto, a few blue cheese crumbles, a little arugula, then top with two more slices of prosciutto and two slices of provolone. Sandwich the other pieces of bread on top with the fig spread facing down.
Place in a large skillet or in a panini press for 3-4 minutes per side, or until the cheese is melted and the bread is crispy brown on the outside.
Slice into the prosciutto provolone grilled cheese and dig in!
Yum! Can’t beat the deliciousness of melty cheese!
