The easiest & most delicious Tomato Basil Chicken Skewers are made with marinated chicken, cherry tomatoes & fresh basil for a healthy, gluten free meal, made on the grill!
Skewers are one of my favorite things to grill in the summer. They’re easy to prep ahead of time and perfect for everything from easy weeknight dinners to entertaining friends around the BBQ.
These Tomato Basil Chicken Skewers are so flavorful and so easy to make! In just 29 minutes you can give the chicken a quick marinade, skewer these babies up and toss them on the grill for a delicious meal!
I love the burst of sweetness from the cherry tomatoes paired with the balsamic, garlic, basil marinated chicken. It’s light, flavorful and perfect for summer!
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- ½ tsp sea salt
- ½ tsp black pepper
- 3 cloves garlic (crushed)
- 2 tbsp fresh basil (chopped)
- 1 lb chicken (cut into 1 inch cubes)
- 2 cups fresh basil leaves
- 4 cups cherry tomatoes
Combine the olive oil, balsamic vinegar, salt, pepper, garlic and 2 tbsp chopped basil in a medium bowl. Add the chicken and marinate for 10-15 minutes.
Remove the chicken from the marinade and skewer with the cherry tomatoes and basil leaves.
Heat a grill, or grill pan, over medium heat and spray or brush with olive oil.
Once the grill is hot, add the skewers and grill for 4-5 minutes, flip and grill for an additional 4-5 minutes.
This recipe makes approximately 6 large skewers which will easily serve 3-4 for dinner, but the recipe can easily be doubled to serve more at a Summer cookout!
