What started as a simple snack idea to add to my epic Pickle Board, has now become one of my favorite quick and easy appetizers! When it comes to making party snacks, when my best friend comes to town, I always have to make something with pickles.

She’s one of these people that will put a pickle in her soda! She loves pickles in pretty much every way possible. So of course, I had to make an entire Pickle Board for her, dedicated to all the pickle things, and perfect for every pickle-lover in your life!

I wanted to add one homemade snack to the board, so that’s when these pickle bites came to life. A combination of cream cheese, minced up dill pickles, and Frank’s RedHot dill pickle flavored sauce, makes up the filling for these tasty little bites. I added the filling to buttery, flaky puff pastry bites, baked them in the oven, then finished them off with more minced pickles on top.

The result was a creamy, slightly spicy, dill pickle explosion of flavors in a cute, bite-sized little treat! These are the perfect snack for a party, a game day appetizer, or anytime you’re craving a simple pickle treat!

Ingredients

  • Puff pastry dough – for this recipe, you can use one sheet of puff pastry dough to make 24 bites, or both sheets of dough to make 48 bites. Before you start the recipe, make sure to defrost the puff pastry dough. To do this, remove the puff pastry dough from all packaging. Place the sheets on a cutting board to defrost at room temperature for 30 – 40 minutes.
  • Cream cheese – you’ll want to soften the cream cheese for this recipe. I recommend doing this by taking it out of the packaging and placing the cream cheese in a large mixing bowl 30 minutes before starting the recipe. You can do this at the same time you remove the puff pastry dough from the freezer to defrost.
  • Frank’s RedHot Dill Pickle Hot Sauce – I’ve bought this sauce at Sam’s Club and Target. If you can’t find this hot sauce in a store near you, use traditional Frank’s Hot Sauce, or your favorite hot sauce. You can also leave out the hot sauce, if you don’t like any spice.
  • Dill pickles – you can purchase whole pickles, sliced pickles, or pickle spears for this recipe. You’re going to mince up the pickles, so it doesn’t matter which shape you start with.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post. 

  1. Make the puff pastry bites. Place a sheet of puff pastry dough on a floured surface. Lightly dust with flour and use a rolling pin to roll it out just a bit thinner than it started. Slice the dough in 24 equal small squares. Place each square of puff pastry dough in a mini muffin tin. If you’re using both sheets of puff pastry dough to make 48 “bites” you’ll need two mini muffin tins. Place them in a 375°F oven and bake for 12 minutes.
  2. Make the creamy pickle filling. In a large mixing bowl, combine softened cream cheese with minced pickles, and pickle-flavored hot sauce.
  3. Fill the puff pastry bites. When the puff pastry bites come out of the oven, use the round end of a spatula handle to press down in the middle of the puff pastry bites, so they’re ready to fill. Use a small spoon, or a pastry piping bag to fill the puff pastry bites with the creamy pickle filling. Place the bites back in the oven for 5-7 minutes.
  4. Top with more pickles! Remove the bites from the oven and top each one with a few more minced pickles.

Time saving tip

You can make the filling up to 5 days in advance and store it in the fridge. You can also bake the puff pastry bites for 12 minutes (without the filling) in advance and store them in an airtight container on the counter for up to 2 days.

Doing these two steps in advance means that you can fill and bake the bites in 15 minutes before guests arrive for an easy party snack!

Storage and reheating

Store any leftover pickle bites in an airtight container in the fridge for up to 7 days.

To reheat the puff pastry bites, I recommend using the oven, or an air fryer. Either of these methods will warm up the creamy filling, while keeping the puff pastry bites crisp on the outside.

To reheat them in an air fryer, place them in a single layer in an air fryer basket, standing upright. Reheat for 2-3 minutes at 400°F.

To reheat them in the oven, place them on the middle rack of the oven with the broiler on low. Reheat them for 3-4 minutes, but always keep an eye on anything in the oven under the broiler to make sure that it does not burn.

  • This recipe makes 48 pickle bites. If you’d like to cut the recipe in half, only use one sheet of puff pastry dough, 4 ounces of cream cheese, 2 tablespoons hot sauce and ½ cup minced pickles.
  • You can make the filling up to 5 days in advance and store it in the fridge. You can also bake the puff pastry bites for 12 minutes (without the filling) in advance and store them in an airtight container on the counter for up to 2 days.
  • Store any leftover baked pickle bites in an airtight container in the fridge for up to 7 days.
