Why these baked chicken wings are the best
Three things make these oven baked chicken wings the best, and once you’ve tried them you’ll understand why I make such a bold claim!
- They’re perfectly seasoned. If you ask me, most people under-season their wings. I have perfected the amount of seasoning to wing ratio that will give you perfectly flavorful wings, no matter which dry rub you use. (But might I recommend my chicken wing seasoning?!)
- Adding baking powder to the seasoning on the wings. This is what makes these wings extra crispy. Just trust me, once you try it, you’ll never make wings without this secret ingredient!
- Baking at a high temperature for the perfect amount of time. If the chicken wings are cooked at too low of a temperature, they won’t crisp up on the outside. If the wings are cooked too long, the inside will dry out. I have tested and perfected the time and temperature on these wings, so they’re tender and juicy inside and perfectly crispy outside!

Ingredients
Here I explain the best ingredients for this baked chicken wings recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.
- Chicken wings – I recommend purchasing “party wings” which contain both the drumettes and the wingettes or “flats”, already separated. Otherwise, if you purchase whole chicken wings, you’ll have to separate the drummette, wingette and tips yourself. The wing tips are mostly cartilage, bone and skin, so you can either discard them, or toss them in the freezer to use for chicken stock at a later date.
- Chicken wing seasoning – this spice blend combines chili powder, smoked paprika, garlic powder, onion powder, salt and cayenne pepper. You can always use your favorite seasoning blend or dry rub. Check out the section below on seasonings and sauces for all of my favorite combinations.
- Baking powder – this is the secret ingredient I use to make the most crispy wings! Just don’t swap it out for baking soda, chemically they don’t do the same thing, and it won’t work. If you don’t have baking powder, just skip it and season the wings without it.
Instructions

- Season the wings. Combine the dry rub, or seasoning of your choice, with baking powder in a large bowl. Add chicken wings to the bowl and toss until they’re completely coated in the seasoning.
- Bake the wings. Preheat the oven to 425°F (preferably on convection, for the most crispy wings). Arrange a rack in the middle of the oven. Place the wings on a wire rack on top of a rimmed baking sheet, lined with aluminum foil or parchment paper. Place the chicken wings on the middle rack in the oven and cook for 20 minutes, flip and cook for an additional 20 minutes.

If you decide to sauce the wings, never use cold sauce. If the sauce you’re using has been stored in the refrigerator, take it out before starting this recipe and let it come up to room temperature on the counter.
You can also heat up sauces like buffalo sauce, general tso, or chipotle honey, in a large skillet on the stove and toss the cooked wings in it before serving. This will give them a sticky sweet texture and warm flavor on the outside of the wings.
These oven baked wings are also delicious served with a dip like ranch dressing or blue cheese dressing on the side, and carrot and celery sticks to accompany the wings.
Oven Baked Chicken Wings
Ingredients
- 2 pounds chicken wings, party wings, with flats and drums separated
- 3 tablespoons seasoning, chicken wing, lemon pepper, cajun, or bbq
- 1 tablespoon baking powder
- ½ cup sauce, optional: buffalo, lemon pepper, cajun, bbq
Instructions
- Preheat the oven to 425°F (preferably on convection). Arrange a rack in the middle of the oven.
- Pat the wings completely dry. This will help them get extra crispy.
- Combine the seasoning and baking powder in a large bowl. Add the wings and toss them in the seasoning.
- Place the wings on a wire rack on top of a rimmed baking sheet. Place on the middle rack in the oven and cook for 20 minutes, flip and cook for an additional 20 minutes. Remove from the oven and toss with sauce if desired.
Notes
- Always make sure to pat the wings completely dry with paper towels to remove any moisture before seasoning the wings. No matter the cooking method, this will help the skin on the chicken wings get super crispy.
- Cooked wings that have not been sauced can be stored in the fridge in an airtight container for up to 5 days. Reheat them on a wire rack, on top of a baking sheet, in the oven at 400°F for 4-6 minutes.
