Ingredients
Here I explain the best ingredients for this elote recipe with buffalo sauce, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.
- Mayonnaise
- Sour cream
- Buffalo sauce – I like Frank’s RedHot Buffalo Sauce, but feel free to use your favorite brand.
- Corn on the cob – this recipe is traditionally made with grilled corn on the cob. If you don’t have a grill available, you can follow this blog post for how to cook corn on the cob. It will give you step-by-step instructions for how to make it on the stove, in the oven, or in an Instant Pot.
- Blue cheese crumbles
- Cilantro
To make traditional elote, replace the buffalo sauce with 1 teaspoon chili powder and the blue cheese crumbles with crumbled cotija cheese. Serve with lime wedges on the side for squeezing lime juice over the corn.
Instructions
- Prepare the sauce. Add mayo, sour cream and buffalo sauce to a small bowl. Stir to combine, then set aside.
- Grill the corn. Preheat a grill to medium-high heat, between 375-400°F. Shuck four ears of corn, then place them on the hot grill and cook for 10 minutes, rotating throughout the cooking time.
- Sauce the corn. As soon as the corn comes off the grill, use a small spatula to spread a thin layer of the prepared creamy buffalo sauce mixture on all of the kernels on each ear of corn.
- Garnish the corn. Place the corn on a plate and sprinkle with blue cheese crumbles and fresh chopped cilantro. Serve immediately.

Grilled Elote with Buffalo Sauce
Ingredients
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon buffalo sauce
- 4 ears corn, shucked
- ½ cup blue cheese crumbles
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a small bowl, combine the mayonnaise, sour cream, and buffalo sauce. Set aside.
- Preheat a grill to medium-high heat, between 375-400°F.
- Shuck the ears of corn, then place them on the grill and cook for 10 minutes, rotating throughout the cooking time.
- Remove the corn from the grill and immediately spread a thin layer of the creamy buffalo sauce mixture on all sides of the ears of corn.
- Sprinkle with blue cheese crumbles and garnish with fresh chopped cilantro.
Notes
- To make traditional elote, follow the instructions above, but replace the buffalo sauce with 1 teaspoon chili powder and the blue cheese crumbles with crumbled cotija cheese.
