My secret to making flavorful recipes at home is using homemade seasoning blends. These recipes for spice mixes and dry rubs are some of the most popular recipes on the blog. And for good reason!
By mixing up your own seasoning blends at home, you can easily add flavor to any quick and simple recipe. They’ll stay good in the pantry for up to 6 months, so you can keep them mixed up and handy for whenever you want to spice up a recipe.
I love this fry seasoning because it easily adds flavor to frozen fries, when you’re looking for a quick and easy side dish. But it’s also really great on homemade air fryer french fries, for when you have a little more time and want to make something hot, fresh and homemade!
With just 7 ingredients, you can mix up this spice blend and easily make restaurant-quality seasoned fries at home anytime! If you like Rally’s or Red Robin’s seasoned fries, then you’re going to love this recipe. It was based off of the seasoning used on the french fries at these popular restaurant chains, and the taste is incredibly similar.
Ingredients
- Paprika – while I use traditional paprika to make this fry seasoning, if you’d like to add a little smokiness to the flavor, feel free to use smoked paprika instead. Or to add a slight sweetness to the mix, use sweet paprika.
- Garlic powder (or granulated garlic) – the only difference between granulated garlic and garlic powder is that the powder has been ground finer, than the granulated garlic. I prefer to use granulated garlic because it’s less likely to clump over time, than garlic powder.
- Onion powder (or granulated onion) – the only difference between granulated onion and onion powder is that the powder has been ground finer, than the granulated onion. I prefer to use granulated onion because it’s less likely to clump over time, than onion powder.
- Sea salt (or kosher salt) – both sea salt and kosher salt can be used interchangeably when cooking. I prefer either kosher or sea salt, over table salt, in this seasoning mix because of their coarse texture and superior flavor.
- Black pepper – I recommend a course-ground pepper for this recipe, as it adds great texture to the spice blend.
- Mustard powder – you may also see mustard powder labeled as dry mustard or ground mustard at the grocery store. They’re all the same and can be used interchangeably.
- Cayenne pepper – using just a small amount of cayenne adds a slight spice to the mix and great flavor. However, it can be omitted if you prefer no spice at all.
Instructions
- Combine all of the ingredients in a small bowl.
- Store in an airtight container in the pantry for up to 6 months.

Recipe tips
- This recipe makes 11 tablespoons of homemade french fry seasoning. If you’d like to make a double batch of the seasoning, simply click on the 2X button in the recipe card below. The ingredient amounts in the recipe card will automatically update to accommodate the new serving size.
- I recommend using 1 tablespoon of seasoning per pound of french fries that you’d like to season. This goes for frozen fries, or homemade fries.
- The fry seasoning will stay good, stored in an airtight container in the pantry, for up to 6 months. After that the spice blend will not “go bad” but as spices sit longer, they begin to lose their flavor.
- I recommend storing the seasoning mix in an 8 ounce mason jar or large spice jar. If doubling the recipe, use a pint size or 16 ounce mason jar. I recommend labeling the fry seasoning with a date and using the seasoning mix within 6 months. In my house, we double this recipe and it’s easily gone in a month, so I don’t think you’ll have a problem using it all up!
- To make a spicy fry seasoning, increase the amount of cayenne pepper from 1 teaspoon, up to 1 tablespoon.
- This recipe is naturally gluten free.
How to make seasoned fries
If cooking homemade french fries, or frozen fries, in an oven or air fryer, spray the fries with cooking spray first, then toss them with the fry seasoning. Cook according to the instructions in the recipe, or on the bag.
If cooking fresh or frozen fries in a deep fryer, or pan frying them, cook the fries first according to the instructions in the recipe, or on the bag. When they come out of the oil, immediately sprinkle the fry seasoning evenly over the fries.
I recommend 1 tablespoon of seasoning per pound of french fries to make perfectly seasoned fries. You can adjust this according to your taste. If you prefer a lightly salted fry, I recommend starting with 2 teaspoons of the seasoning per pound of fries, and then adjusting up if you’d like.
Use this recipe to season fries, potato wedges, sweet potato fries, or really any kind of fried or baked potatoes. I love using it on air fryer tater tots also!

Ingredients
- ¼ cup salt
- 2 tablespoons paprika
- 2 tablespoons onion powder, or granulated onion
- 2 tablespoons garlic powder, or granulated garlic
- 1 teaspoon black pepper
- 1 teaspoon dry mustard, or mustard powder
- 1 teaspoon cayenne pepper
Instructions
- Combine all ingredients in a small bowl or mason jar.
- Store in an airtight container in the pantry for up to 6 months.
Notes
- To make seasoned fries, toss 1 pound of french fries with 1 tablespoon seasoning. You can adjust this according to your taste. If you prefer a lightly salted fry, I recommend starting with 2 teaspoons of the seasoning per pound of fries, and then adjusting up if you’d like.
- When seasoning fries for the oven or air fryer, spray the fries with cooking spray first, then toss with the seasoning.
- When making the fries in a deep fryer, fry the potatoes, then toss with the seasoning.
- To make a spicy fry seasoning, increase the amount of cayenne pepper from 1 teaspoon, up to 1 tablespoon.
- For a seasoning with no spice at all, omit the cayenne pepper in this recipe.
- This recipe is naturally gluten free.
