Easter is right around the corner, and I don’t know about y’all, but Easter Brunch is one of my favorite times of the year to get together with friends and family and enjoy delicious food!
It’s kind of like the “Thanksgiving of Spring”, but instead of turkey, we have ham and instead of mashed potatoes, we have crispy french toast sticks! 😉
French toast has always been one of my go-to favorite brunch recipes, and making french toast into french toast sticks, just makes them more fun and dunk-able!
Instead of syrup, I drizzled these crispy french toast sticks with honey. Sweet, delicious and pairs perfectly with the macadamia nut crust!
What You’ll Need
- 1 cup milk
- 3 eggs
- 1 tbsp honey + more for dipping
- 1 tsp ground cinnamon
- 4 cups corn flakes (crushed)
- 1 cup macadamia nuts (finely chopped)
- 8 slices King’s Hawaiian Sweet Sliced Bread (sliced into 1 inch sticks)
- 2 tbsp butter
How to Make Crispy French Toast Sticks
Whisk the milk, eggs, 1 tbsp honey and cinnamon together in a shallow bowl.
Combine the crushed corn flakes and chopped macadamia nuts in another shallow bowl.
Dip the King’s Hawaiian bread “sticks” in the egg mixture, then roll in the corn flakes and macadamia nuts.
Once all of the french toast sticks are prepared. Heat the butter in a large skillet over medium heat.
Add them to the skillet and cook for 2-3 minutes per side.
Drizzle with the honey, or serve on the side for dipping.

Ingredients
- 1 cup milk

I tried the Macadamia Nut Crispy French toast this morning for my Wife’s birthday brunch. BIG hit. Toasted w/ Champagne. Some comments:
We love macadamia nuts, and all things “south seas” so I substituted Coconut milk for the Milk, and added a package of sweetened flake coconut to the dry mix. Worked pretty well…but…
Probably just me not being very experienced, but I crushed the corn flakes, and THEN measured 4 cups. That is WAY WAY too much cornflakes! And, I think that much CF diluted the taste of the macadamia and coconut. I threw out most of the dry mixture.
Also, King’s Hawaiian just is not available at my local (Maryland) Giant store. But they had a nice store-made sourdough loaf I used instead. I think I sliced it a bit too thick, and it took longer too “fry”. Also, I was afraid the hard crust wouldn’t translate well. It was a bit chewy, but on the other hand, it really held the Sticks together through the wet dip/dry dip/fry process. I often had an issue with french toast falling apart before it hits the griddle.
Also, I had to cook a couple of batches, and the fall-off of the topping in the skillet eventually got over-done and sticked to the next batch, causing the second group to look and taste a little over done (ie: burned a bit).
So all in all, a fun, tasty, Birthday brunch. I’ll know more next time about the corn flakes (duh), and will experiment with another type of available bread (any suggestions?).
