Mmm mangos, the delicious tropical fruit that goes great in margaritas, salads and salsas, and is perfect for topping grilled meats in the summer!
When it comes to mango salsa, I love to eat it any way I can! Dipped up with chips, on top of baked salmon or with a spoon straight to my mouth! 😉
Mango salsa is made up of a simple combination of mango, tomato, onion, jalapeno, cilantro and lime juice. All of these fresh ingredients combine to make a salsa worthy of eating straight from the spoon!
Now if you’re worried about how to find the perfect mango or how to dice up the tricky fruit, never fear, I’m here with some fun mango facts, tips and tricks!
When is mango season?
Mango season peaks in June, July and August each year, but mangos can be found year-round. Finding a ripe mango may be harder during non-peak season, so plan ahead and purchase mangos a few days before you’ll be using them so that they have time to ripen at home.
How to find a ripe mango:
To find the perfect fresh mango, squeeze the mango gently. A ripe mango will be slightly soft to the touch, like a peach or avocado. A firm mango will ripen at room temperature over a few days. Once the mango is ripe, you can store it in the refrigerator for a few days to slow down the ripening process.
How to cut a mango for mango salsa:
Find the seed in the middle of the mango, then cut on each side of the seed. Once you have the mango cut in two halves, use a sharp knife to cut vertical and horizontal rows to make cubes, being careful not to cut all the way through the skin. Use a spoon to scoop the diced mango out of the skin and into your delicious salsa!
Chipotle Honey Glazed Chicken
To make the delicious chicken for which to top with the scrumptious mango salsa, simply place the chicken in foil baskets, made by folding a piece of foil into a basket shape, then top with the chipotle honey glaze made with fresh lime juice, honey, chipotle pepper powder, cumin, paprika and cilantro.
You then want to grill the chicken topped with the glaze in the foil so that the chicken doesn’t stick to the grill and so that the glaze stays on the chicken instead of dripping through the grill grates.
Remove from the grill, slice and top with the mango salsa for a delicious dinner!

Mango Salsa Chicken with Chipotle Honey Glaze
Ingredients
- ¼ cup honey
- 2 tbsp lime juice
- 1 tsp ground chipotle pepper
- ½ tsp ground cumin
- ½ tsp paprika
- 1 tbsp fresh cilantro, chopped
- 2 boneless, skinless chicken breasts , app 1/2 lb each
- 1 cup Mango Salsa, ← click link for recipe
Instructions
- Preheat a grill to medium heat.
- In a medium bowl, combine the honey, lime juice, chipotle powder, cumin, paprika and cilantro.
- Place each chicken breast in it’s own foil basket. Pour the chipotle honey glaze over each chicken breast in the foil.
- Place the chicken in the foil on the grill and grill for 10-12 minutes per side.
- Remove from the grill, rest 5 minutes, then slice and top with the mango salsa.
