Making homemade spice blends is my secret for adding extra flavor to all of my meals. From fajitas, to meatloaf, it’s easy to infuse these dishes with incredible flavor by using the right blend of herbs and spices.
Whether you’re seasoning a smoked meatloaf, bacon wrapped meatloaf or just a basic meatloaf recipe for an easy weeknight meal, this seasoning blend will amp up the taste and turn everyone in the family into meatloaf fans!
Ingredients
- Sea salt (or kosher salt) – both sea salt and kosher salt can be used interchangeably when cooking. I prefer either kosher or sea salt, over table salt, in this seasoning mix because of their coarse texture and superior flavor.
- Black pepper – I recommend a coarse-ground pepper for this recipe, as it adds great texture to the spice blend.
- Paprika – while I use traditional paprika to make this meatloaf seasoning, if you’d like to add a little smokiness to the flavor, feel free to use smoked paprika instead. Or to add a slight sweetness to the mix, use sweet paprika.
- Mustard powder – you may also see mustard powder labeled as dry mustard or ground mustard at the grocery store. They’re all the same and can be used interchangeably.
- Garlic powder (or granulated garlic) – the only difference between granulated garlic and garlic powder is that the powder has been ground finer, than the granulated garlic. I prefer to use granulated garlic because it’s less likely to clump over time, than garlic powder.
- Onion powder (or granulated onion) – the only difference between granulated onion and onion powder is that the powder has been ground finer, than the granulated onion. I prefer to use granulated onion because it’s less likely to clump over time, than onion powder.
- Celery seeds – this earthy, aromatic seed, adds the flavor of celery to your meatloaf, without having to add actual celery to the dish.
- Dried parsley – even in it’s dried form, parsley adds a bright, fresh flavor to this seasoning mix that pairs well with the other spices.
Instructions
- Combine all of the ingredients in a small bowl.
- Store in an airtight container in the pantry for up to 6 months.

Recipe tips
- This recipe makes 12 tablespoons of homemade meatloaf seasoning. If you’d like to make a double batch of the seasoning, simply click on the 2X button in the recipe card below. The ingredient amounts in the recipe card will automatically update for the new serving size.
- I recommend using 3 tablespoons of meatloaf seasoning for a meatloaf with 2 pounds of meat. Refer to my basic meatloaf recipe below for an example. If you’re making a smaller meatloaf with only 1 pound of meat, reduce the seasoning to 1 1/2 tablespoons
- The meatloaf seasoning will stay good, stored in an airtight container in the pantry, for up to 6 months. After that the spice blend will not “go bad” but as spices sit longer, they begin to lose their flavor.
- I recommend storing the seasoning mix in an 8 ounce mason jar or large spice jar. If doubling the recipe, use a pint size or 16 ounce mason jar. I recommend labeling the meatloaf seasoning with a date and using the seasoning mix within 6 months.
- This recipe is gluten free, and contains no added sugar, making it perfect for a whole30 or keto diet.
How to make basic meatloaf
- Add 1 tablespoon olive oil to a large skillet on the stove over medium-high heat. Add 1/2 cup diced onions and cook for 4 minutes, add 3 cloves minced garlic and cook for one more minute. Remove the skillet from the heat on the stove and set it aside.
- In a large bowl, combine 1 pound ground beef, 1 pound ground pork, 3 tablespoons meatloaf seasoning, 2 large eggs, 1/2 cup panko bread crumbs and 2 tablespoons Worcestershire sauce. Add the cooked onions and garlic, and stir until everything is mixed together.
- Press the meat mixture into a 9-inch by 5-inch loaf pan.
- Bake in a preheated 375°F oven for 25 minutes.
- Remove the meatloaf from the oven and spread 1/2 cup bbq sauce over the meatloaf. Or, instead of bbq sauce, combine 1/2 cup ketchup with 2 tablespoons brown sugar, 1 tablespoon Worcestershire sauce and 2 teaspoons meatloaf seasoning to make a sauce for the meatloaf.
- Return the meatloaf, topped with sauce, to the oven and bake for another 25 minutes, or until the internal temperature reaches 160°F.

I made a batch of the meatloaf seasoning and the followed your recipe for the actual meatloaf. It turned out amazing! I’m a meatloaf fanatic and have tried dozens of variations, but this one is the keeper. Perfectly seasoned, tender and moist.
I love the addition of the celery seeds as I’m not a fan of the texture of celery in meatloaf but think it adds a nice flavor. I never thought of using the celery seeds. Thank you for this great recipe!
