I’m so excited to share this recipe today. This is legit my new favorite burger recipe. I honestly don’t know if I’ll ever make another burger again! This is it, my one true burger love.

A juicy, well-seasoned, perfectly grilled burger topped with umami-packed sauteed mushrooms. It really doesn’t get much better than that! Well, I might also recommend that you throw some caramelized onions and burger sauce on there too, but I’ll leave the topping options up to you!

The real key to this flavor-packed burger is in the burger patty, sauteed mushrooms and swiss cheese. It’s a classic burger combination that can’t be beat!

Ingredients

For the exact ingredient amounts, refer to the recipe card at the bottom of this post.

  • Mushrooms – for this recipe I used baby bella mushrooms, also called crimini mushrooms. These are my favorite mushrooms due to their wonderful flavor. You can also use white button mushrooms, or sliced portobello mushrooms.
  • Butter + olive oil – using a combination of butter and oil enhances the flavor of the sauteed mushrooms. Combined, they add a rich, creamy flavor and texture to the dish. Extra virgin olive oil has a great neutral flavor that works perfectly along with the other ingredients in this recipe. Other mild tasting oils can be used as well.
  • Worcestershire sauce – this amazing condiment adds so much flavor to both the burgers and mushrooms. It’s sweet, salty, tangy and adds even more umami flavor to these burgers. If you don’t have any Worcestershire sauce in the kitchen, you can use soy sauce instead.
  • Beef broth – you only need 1/4 cup, so if you don’t have any beef broth on hand, feel free to use chicken broth or water.
  • Garlic – I always recommend fresh minced cloves for the best flavor! You may also use minced garlic in a jar, but the taste won’t be as fresh.
  • Black pepper
  • Ground beef – I recommend a ground beef that’s 80/20, meaning 80% lean and 20% fat. This will give you the perfect amount of fat to make tender, juicy burgers!
  • Steak seasoning –  I always like to use my homemade seasoning whenever possible. It has so much flavor and is easy to mix up in 5 minutes, or less! You can also pick up pre-made Montreal steak seasoning at the grocery store in the spice aisle.
  • Swiss cheese – if you want to get fancy, you could use sliced gruyere cheese instead.
  • Hamburger buns – I recommend brioche buns, as the buttery flavor is so delicious when paired with these burgers.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

  1. Cook the mushrooms. Add butter and olive oil to a large skillet over medium-high heat. Once the butter has melted, add sliced mushrooms and Worcestershire sauce to the skillet. Stir to combine the ingredients in the skillet. Cook for 5 minutes without stirring. Add beef broth to the skillet and cook for 8-10 minutes. Add minced garlic and black pepper, cook for an additional 3-4 minutes. Remove the mushrooms from the heat and set them aside.
  2. Form the burger patties. In a large bowl, combine ground beef, steak seasoning and Worcestershire sauce. Form the seasoned beef into four 1/4 pound burger patties.
  1. Grill the burgers. Preheat the grill to medium-high heat. Once the grill is hot, add the burger patties and grill for 4-5 minutes per side.
  2. Add the cheese. During the last 1-2 minutes of cook time, place a slice of swiss cheese on top of each burger patty. Add the buns to the grill for 30-60 seconds to toast them. Remove the buns from the grill, then remove the burgers once the swiss cheese starts to melt. Do not immediately put the burgers on the buns, instead allow them to rest for 5 minutes on a separate plate or cutting board before assembling the burgers. This will let the juices redistribute throughout the burger and will prevent the buns from getting soggy.

Optional toppings

This mushroom swiss burger recipe is delicious as written, but it’s also fantastic with some extra toppings! Feel free to add none, one, or all of them.

  • Caramelized onions – one of my all-time favorite burger toppings. I love the pairing of caramelized onions and sauteed mushrooms on this burger. While caramelizing onions does take a little time, it’s super easy! I started caramelizing onions just before starting this recipe, and by the time I was done cooking the mushrooms and grilling the burgers, the onions were ready to go! You can also make them ahead of time and store them in the fridge for up to one week, or the freezer for 3 months. Click the link above for my easy step-by-step guide to caramelizing onions.
  • Burger sauce – this is the other topping I like to add to these burgers. I use this sauce on my Animal Style Burger recipe and now basically any other burger I make! Simply combine ½ cup mayonnaise, 2 tablespoons ketchup, 2 tablespoons finely chopped pickles and 2 teaspoons dijon mustard in a small bowl. Spread a little of this on the bottom bun before adding the caramelized onions for a delicious creamy, tangy addition to the burgers.
  • Ketchup, mustard or mayonnaise – pick any of the classics to add to this burger instead of the burger sauce, if you’d like!
  • Lettuce, tomatoes or raw onions – classic burger toppings that can all be added to the burger.
  • Bacon – add a salty crunch to these burgers by using my oven-baked bacon recipe to cook up some crispy bacon and add it the burgers. If you really want to get fancy, try adding candied bacon to the burgers!

Pro tips

  • Do not immediately place the burgers on the buns when removing them from the grill! This is a common mistake people make when preparing burgers, and one that I did for years. By placing the toasted buns and grilled burgers on separate plates, you allow the juices to redistribute throughout the burgers and not just soak right into the buns. I recommend waiting 5 minutes before assembling the burgers. Just like you rest a steak, resting burgers makes them more juicy and flavorful! And this process prevents your buns from getting soggy, so it’s a win-win!
  • Cooking a one inch thick burger for 4-5 minutes per side over medium-high heat will result in a medium burger. If you’d like your burger medium-well, add 1 minute per side. If you’d like well-done burgers, cook them for 6-7 minutes per side.
  • Always make sure your grill is hot before adding the burgers. Adding burgers (or any food for that matter) to a hot grill is important for cooking safety. It will also give you a beautiful sear on the outside, while keeping the burgers super juicy on the inside. Burgers should be cooked over medium-high heat, between 350-400 degrees fahrenheit.
  • Never flatten the burgers with a spatula while they’re on the grill. This will release all of the juicy flavor in the middle of the burger, creating a hamburger that’s less flavorful and juicy.
  • The mushrooms can be made ahead of time and stored in the fridge for up to 7 days. When you’re ready to grill and assemble the burgers, simply heat the mushrooms up in a skillet on the stove over medium-high heat for 5 minutes, or in the microwave for 2 minutes.
  • This recipe can be made on the stove. No grill? No problem! Simply cook the burgers on a grill pan, cast iron skillet, or the heaviest skillet you have available. Place the skillet on the stove over medium-high heat and cook for the burgers for 4-5 minutes per side. Add the swiss cheese on top during the last 1-2 minutes of cook time.

Sauteed Mushrooms

  • Prepare the mushrooms by adding the butter and olive oil to a large skillet on the stove over medium-high heat.
  • Once the butter has melted, add the mushrooms and worcestershire sauce to the skillet, stir to combine everything in the skillet, then cook for 5 minutes without stirring.
  • After 5 minutes, add the broth to the skillet and allow it to evaporate, this will take approximately 8-10 minutes.
  • Once almost all of the liquid has cooked out of the skillet, add the minced garlic and black pepper to the skillet with the mushrooms.
  • Cook for an additional 3-4 minutes, remove from the heat and set aside.

Burgers

  • Prepare the burger patties by combining the ground beef, steak seasoning and worcestershire sauce in a large bowl. Form into four 4 ounce patties.
  • Heat a grill to medium-high heat.
  • Once the grill is hot, add the burgers and grill for 4-5 minutes per side.
  • During the last 1-2 minutes of cooking time, place a piece of swiss cheese on each burger patty.
  • Place the buns on the grill to toast.
  • Remove the burgers from the grill and allow them to rest on a cutting board for 3-5 minutes before placing them on the buns.
  • Place the burgers on the toasted buns, top with the sauteed mushrooms and add any other optional toppings of your choice.
