One of the ways I create easy recipes with bold flavors is by making and using my own seasoning blends. Over the years, I’ve shared over 40 different seasoning mix recipes on the blog.

Just like all of my seasoning blends, this poultry seasoning recipe is easy to mix up in 5 minutes or less, and you probably already have most of the ingredients in your spice cabinet at home.

This versatile spice blend is great to keep on hand around Thanksgiving and Christmas because it adds wonderful flavor to turkey, stuffing, and gravy. But I also like to keep it in the pantry year-round to use on chicken and pork. The combination of herbs and spices in this recipe adds so much flavor to anything you use it on. You’ll want to double it up so you can use it in every poultry recipe you make!

Ingredients

Here I explain the best ingredients for this homemade poultry seasoning recipe. For the exact ingredient measurements, see the recipe card at the bottom of this post.

  • Dried thyme
  • Crushed rosemary – I recommend dried crushed rosemary if you can find it, as the texture blends into the spice mix better than dried rosemary leaves. In a pinch, either will work!
  • Marjoram leaves – if you don’t have dried marjoram in your spice cabinet, you can use dried oregano in it’s place.
  • Sage – I recommend using rubbed sage leaves instead of ground sage in this recipe for a more consistent texture, paired with the other dried herbs.
  • Black pepper
  • Ground nutmeg

I purposefully did not include salt in this recipe, so you can salt to your taste. Or if you’re on a low-sodium diet, you can still use this spice blend. If you want to add salt to the blend, I recommend adding 2 teaspoons kosher salt or sea salt.

Instructions

Combine all of the dried herbs and spices in a bowl. I enjoy the texture of this spice blend, but if you want to grind the herbs, you can use a spice grinder, or mortar and pestle, to grind them into a finer consistency.

Store the seasoning mix in an airtight container in a cool, dry place for up to 6 months. After 6 months, the spice blend will not “go bad”, but as dried herbs and spices sit longer, they begin to lose their flavor.

Ways to use it

Season turkey. I recommend 1 tablespoon of poultry seasoning per pound of meat. I love using it to season an Air Fryer Turkey Breast (pictured above). The flavor is so good! You could also use it to make an Oven Roasted Turkey Breast, Slow Cooker Turkey Breast, Smoked Turkey, or use your preferred method of cooking a whole turkey or turkey breast.

Season pork or chicken. Just like turkey, I recommend using 1 tablespoon of the seasoning per pound of meat. After seasoning the chicken or pork, you can oven roast it, smoke it, grill it, or sous vide it.

Season stuffing. I recommend adding 3 tablespoons of poultry seasoning to a standard stuffing recipe made in a 9 inch x 13 inch baking dish. You can use your favorite recipe, or replace the herbs in these recipes for Mushroom Stuffing, Sausage Stuffing, or Gluten Free Sweet Potato Stuffing, with this poultry seasoning.

Add flavor to gravy by seasoning it with this poultry seasoning. Use it in your favorite gravy recipe or this recipe for Mushroom Gravy.

Season soups, stews, or casseroles. Add a wonderful herb-forward flavor to any of these dishes by seasoning it with this poultry seasoning. I particularly love it in this Chicken Pot Pie Soup.
