Red Velvet Cookies with White Chocolate Chips & Blueberries

Red Velvet Cookies are filled with white chocolate chips and blueberries in this colorful and patriotic dessert recipe, perfect for summer and 4th of July!
It’s almost time for 4th of July festivities and what’s more fun and patriotic than red, white and blue cookies!
A couple of weeks ago I was eating lunch with my boyfriend Kurt and our friend Matt at Souplantation (those guys are obsessed with that place!) and at the end of our meal, Matt put a blueberry muffin in the bottom of a bowl, then topped it with chocolate soft serve.
I thought he was either totally weird or a total genius! Turns out this time, he was a total genius!
The combination of blueberries and chocolate is totally tasty, which then gave me the idea for these patriotic cookies!
White chocolate chips + blueberries + red velvet cookies = chewy, chocolatey, deliciousness!
Red Velvet Cookies Ingredients
- 1 ½ cups flour
- ¼ cup unsweetened cocoa
- ½ tsp kosher salt
- 1 tsp baking soda
- ¼ cup melted butter
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg
- 1 tbsp red food coloring
- ½ tsp vanilla
- 1 tsp white vinegar
- 1 cup white chocolate chips
- 1 cup blueberries
Red Velvet Cookies Instructions
Pre-heat the oven to 325°F.
Combine the flour, cocoa, salt and baking soda in a small mixing bowl and set aside.
In a large bowl mix the melted butter, granulated sugar and brown sugar together.
Combine the egg with the other ingredients.
Add the food coloring, vanilla and vinegar.
Add the dry ingredients.
Hand mix in the white chocolate chips and blueberries.
Scoop into large rounded tablespoons and place on a baking stone or parchment lined baking sheet.
Place in the oven and bake for 14-16 minutes.
