Superfood Fruit Parfait Recipe

When I first tried Nature’s Path new Qi’a Superfood Bars at the Natural Products Expo in March, I was hooked!

Delicious bars that are packed full of healthy ingredients, that are also gluten-free and vegan, yes, please!

While I love eating the bars as a quick and easy snack for breakfast, or throughout the day, I also wanted to find other ways to incorporate them into my diet.

Since I do a ton of hiking in San Diego, I always like to pack snacks for after the hike. Qi’a bars, yogurt and fruit were a few of the things I would pack, so one day I decided to combine them all in cute little mason jar parfaits!

Vegan Superfood Fruit Parfait Recipe

A layer of soy-based yogurt keeps these parfaits vegan, while still providing a good source of protein. The Qi’a Blueberry Cashew Pumpkin Seed Bars and Soy Yogurt combine for a total of 11 grams of protein per mason jar parfait, a great way to fuel up after a hike, or work out!

Layering the yogurt at the bottom of the jar, with the fruit in the middle and crumbled Qi’a bars on top keeps the Qi’a bars from getting soggy, so whether these fruit parfaits are chilling in a cooler while you go for a hike or waiting for you in the fridge when you return home from the gym, they’re going to taste delicious and fuel you with Omega 3s & antioxidants!

Superfood Fruit Parfait Ingredients

Ingredients

  • 10 oz soy yogurt
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • 2 Qi’a Blueberry Cashew Pumpkin Seed Bars

Place 5 oz of yogurt in the bottom of two ½ pint mason jars. Add ¼ of blueberries & raspberries to each jar. Top each jar with a crumbled Qi’a bar.
