Turkey Taco Casserole Recipe

One of my favorite recipes on the blog is an Italian Turkey Polenta Casserole.  It’s one of my go-to weeknight recipes because it’s so easy to make and so flavorful!

This recipe inspired my latest gluten free dish, Turkey Polenta Taco Casserole, made with Jennie-O’s Taco Seasoned Turkey Sausage. This product is gluten free, flavorful and great for making quick, easy and delicious meals, like this taco turkey casserole!

How to make it

This easy taco casserole recipe starts with a layer of polenta. I buy the pre-cooked tube of polenta, which is usually found near the pasta section of the grocery store. This saves the step of cooking the polenta before making the casserole.

I then add a layer of mexicorn mixed with sour cream, then a layer of cooked taco seasoned turkey sausage, a layer of chunky tomato salsa and finally a layer of shredded pepper jack cheese.

What goes with it

Serve this casserole with tortilla chips and guacamole, green chili queso dip, or 10 minute homemade salsa.

Can you freeze it?

Unfortunately because this casserole contains sour cream it cannot be frozen.

Gluten Free Taco Casserole

Taco seasoned turkey is layered with creamy polenta, sour cream, corn, salsa and cheese in this easy, gluten free taco casserole recipe, made in just 29 minutes!

Ingredients

  • 1 pound Jennie-O Taco Seasoned Turkey Sausage
  • 18 ounces cooked polenta
  • 11 ounce can Mexicorn
  • 1 cup sour cream
  • 2 cups salsa
  • 2 cups pepper jack cheese, shredded

Instructions

  • Preheat the oven to 400°F.
  • Crumble and cook the Jennie-O Taco Seasoned Turkey Sausage in a skillet on the stove over medium high heat for 10-12 minutes. Remove from the heat and set aside.
  • Place the polenta in the bottom of a baking dish.
  • Combine the mexicorn and sour cream and spread over the polenta.
  • Add the cooked taco turkey sausage, top with the salsa and the pepper jack cheese.
  • Place in the oven for 15-20 minutes.
