One of my favorite recipes on the blog is an Italian Turkey Polenta Casserole. It’s one of my go-to weeknight recipes because it’s so easy to make and so flavorful!
This recipe inspired my latest gluten free dish, Turkey Polenta Taco Casserole, made with Jennie-O’s new Taco Seasoned Turkey Sausage.

How to make easy taco casserole?
This easy taco casserole recipe starts with a layer of polenta. I buy the pre-cooked tube of polenta, which is usually found near the pasta section of the grocery store. This saves the step of cooking the polenta before making the casserole.
I then add a layer of mexicorn mixed with sour cream, then a layer of cooked Jennie-O Taco Seasoned Turkey Sausage, a layer of chunky tomato salsa and finally a layer of shredded pepper jack cheese.

This taco casserole recipe serves 6 and is 448 calories per serving.
What goes with taco casserole?
Serve this casserole with Guacamole Stuffed Peppers, they’re the perfect appetizer or side dish to go alongside this recipe. Chips and Green Chili Queso Dip, 5 Minute Homemade Salsa or Spicy Buffalo Black Bean Dip would also go great with this taco casserole!
Can you freeze taco casserole?
Unfortunately because this casserole contains sour cream it cannot be frozen.
Gluten Free Taco Casserole
Ingredients
- 1 lb Jennie-O Taco Seasoned Turkey Sausage
- 18 oz cooked polenta
- 11 oz mexicorn
- 1 cup sour cream
- 2 cups salsa
- 2 cups pepper jack cheese, shredded
Instructions
- Preheat the oven to 400°F.
- Crumble and cook the Jennie-O Taco Seasoned Turkey Sausage in a skillet over medium high heat, 10-12 minutes, set aside.
- Place the polenta in the bottom of a baking dish
- Combine the mexicorn and sour cream and spread over the polenta.
- Add the cooked taco turkey sausage, top with the salsa and the pepper jack cheese.
- Place in the oven for 15-20 minutes.
