Chimichurri Grilled Salmon

One of the easiest and MOST DELICIOUS dinners you’ll make, fresh grilled salmon topped with a flavorful chimichurri sauce. It’s healthy, gluten free & made in just 20 minutes!

Pair this chimichurri salmon with roasted garlic broccolini and cilantro lime cauliflower rice to create a gluten free & low carb meal.

Slices of salmon on plate topped with chimichurri sauce

Today’s post is sponsored by Vons and Santa Monica Seafood.

A couple of weeks ago, I joined my friends at Vons to visit Santa Monica Seafood in Costa Mesa, California. We sampled local wild caught Troll King Salmon from Morro Bay, California.

While wild king salmon isn’t available year-round, when you can get it, you should! It has a delicious flavor and is given a “best choice” sustainability rating.  It’s also loaded with Omega 3’s, those wonderful healthy fats that your body needs. Good for you and good for the environment, this salmon is a win-win!

I brought some of this scrumptious King Salmon home with me, lightly seasoned it and tossed it on the grill. I love to grill salmon on foil for easy clean-up and no worries about the fish sticking to the grill. As soon as I removed the salmon from the grill, I spooned my favorite 5 minute Chimichurri Sauce right on top.

This grilled salmon recipe is quick and easy to prepare with minimal ingredients. I prepared it this way to let the flavor of the fish shine through! This is a great recipe for busy weeknights when you’re looking for a fast and fresh meal to make in under 30 minutes.

Juicy Lucy Burger

The Juicy Lucy “AKA Jucy Lucy” is a hamburger made with cheese inside the burger patty. Adding chopped bacon to the ground beef patty makes these the most juicy burgers ever!

Add my Dad’s Famous BBQ Baked Beans and a Bacon Tomato Avocado Pasta Salad on the side of this burger recipe for a complete, delicious meal!

Juicy lucy burger cut in half with melted cheese in the middle

Today’s post is sponsored by my friends at Cabot Cheese.

Today I’m combining two of my favorite cheeseburger recipes. A cheeseburger stuffed with cheese and a cheeseburger that consists of both ground beef and chopped bacon. You’ll never eat another burger recipe again!

The chopped bacon in the burger patty adds so much flavor and juiciness to the burger. While the cheese stuffed inside the burger is like a wonderfully cheesy explosion in your mouth!

I used Cabot Seriously Sharp Cheddar to stuff these burgers, because it’s seriously THE BEST! The flavor of the cheese paired with the salty, flavorful ground beef bacon burger patties is just incredible.

You can add your favorite burger toppings, but honestly, you don’t even need to! This burger can stand alone on a bun with a little drizzle of mustard or ketchup and nothing else.

You can grill the burger or cook it on a skillet on the stove. Either way, you’re going to fall in love with this juicy lucy burger recipe at first bite!

It’s perfect for 4th of July and summer BBQ’s, but also easy to make inside on the stove year round. It’s made in under 30 minutes, so it’s great for an easy weeknight meal that both kids and adults will love!

Steak and vegetable fajitas in instant pot with fresh cilantro

Today’s post is sponsored by my friends at the California Beef Council.

Fajitas are a common weeknight meal around my house. Veggie Fajita Rice Bowls and Chicken Fajita Grilled Burritos make regular occurrences on our dinner table. But there’s nothing quite like a classic fajita recipe.

Steak + Veggies + Fajita Seasoning = an easy, delicious dinner!

Want the most tender, flavorful fajita meat ever? Make Instant Pot Fajitas! The Instant Pot is perfect for fajitas because you can sauté the veggies right in the same pot that you pressure cook the steak.

After testing this recipe several times, I found that I prefer to remove the veggies from the Instant Pot before pressure cooking the steak. This results in crisp veggies and deliciously tender meat. You still only need one pot for the recipe and it’s made in just 29 minutes. And yes, that includes the pressuring up and down of the electric pressure cooker!

There are several ways to serve the fajitas. They can be served the traditional way in flour tortillas with your choice of toppings. They can also be served in corn tortillas or over rice for a gluten free meal.

Want to make these Instant Pot fajitas low carb? Serve them over Cilantro Lime Cauliflower Rice, topped with sliced avocado. This keto fajita bowl is so delicious and perfect for meal-prep! Without tortillas, these steak fajitas are 8 carbs per serving.

Delicious, easy to make and able to be served in a variety of ways, these Instant Pot Fajitas are a winning recipe!

Low Carb Enchiladas with Zucchini

Thin slices of zucchini replace tortillas in this easy recipe for Low Carb Enchiladas. Topped with pepper jack cheese, filled with taco seasoned ground beef & smothered in a delicious red sauce, you won’t even miss the tortillas in this scrumptious recipe!  It’s perfect for those on a gluten free or keto diet.

Serve the enchiladas with Roasted Tomatillo Guacamole and Cilantro Lime Cauliflower Rice for a completely low carb Mexican feast!

Low carb enchiladas with red sauce in casserole dish topped with sliced jalapenos and avocado

Today’s post is sponsored by my friends at the California Beef Council!

I’ve been on a serious Mexican low carb kick lately, turning all of my favorite Mexican foods into low carb recipes. It all started with The Ultimate Low Carb Nachos, then Cheesy Taco Meatballs and Cauliflower Nachos. Now I’m adding enchiladas to my low carb Mexican menu!

Instead of corn tortillas, traditionally used to make enchiladas, I used thinly sliced zucchini. I layered the zucchini with taco seasoned ground beef, red enchilada sauce and pepper jack cheese. All of the enchilada flavor is there and it’s SO DELICIOUS, but only 17 carbs per serving! This is half of the carbs in traditional enchiladas.

This recipe is not just for those on a low carb diet. It’s also great for those that are gluten free or simply wanting to eat a little healthier. Zucchini is lower in carbs and calories than tortillas. It also provides a significant amount of vitamins C and B6!

It’s so easy to layer up this low carb enchilada recipe and have it on the table in less than 45 minutes!

Cauliflower Nachos

Deliciously cheesy Cauliflower Nachos are healthy, gluten free, vegetarian & easy to make! At only 9 carbs per serving, they’re perfect for those on the keto diet!

Overhead shot of cauliflower nachos on a baking sheet with chipotle cream sauce drizzled on top

Today’s post is sponsored by my friends at Cabot!

I’m always down to make healthier versions of my favorite foods, as long as they’re still delicious and maintain resemblance of the original dish. For example, I’m down to use cauliflower or mini peppers instead of tortilla chips as the base of nachos, but they still have to be seriously cheesy, or it’s just not a nacho!

Last fall, I created Mini Pepper Nachos for those that wanted a low carb option to eat for dinner or snack on during game day. Now, I’m excited to introduce cauliflower nachos on the blog! If you love roasted cauliflower, you’re going to love these nachos!

Cauliflower is tossed in olive oil and taco seasoning then roasted in the oven for 15 minutes. After the cauliflower is roasted, it’s topped with red onions and jalapenos, then loaded up with shredded Cabot Pepper Jack Cheese. The nachos are then placed back in the oven until the cheese gets nice and melty!

After the nachos come out of the oven, you can toss any and all of your favorite toppings on top! Avocado, yes please! Fresh Pico De Gallo, sign me up! Creamy Chipotle Sauce, I’m in!

The cauliflower is seriously filling, so you can easily eat these nachos as a meal. They’re also great for a crowd! Serve them as a low carb party snack or appetizer at your next BBQ or fiesta! Add a Watermelon Jalapeno Margarita and really get the party started!
