Last weekend was Memorial Day weekend, which means the unofficial start of summer!  I don’t know about y’all, but I am SO excited for grilling season and all of the fresh summer produce popping up at the local farmers markets and grocery stores!

One of my favorite salads to eat during the summer is a classic caprese salad. Over the years, I’ve put several of my own twists on the salad, like this Crispy Eggplant Caprese Salad, which is always a show-stopper at dinner parties and this Quinoa Caprese Salad, a healthy side dish I always bring to picnics and BBQs during the summer!

This week has been super busy, but also super fun! I flew up to Sacramento on Monday to make an appearance on Good Day Sacramento and share some of my favorite Summer Cooking Hacks. I flew home just in time to meet my Mom at the airport in San Diego. She flew in from Oklahoma to visit me for the week.

She’s been my assistant this week while I prepared several new yummy recipes for the blog. We made Salted Caramel Ice Cream, Jalapeno Steak Skewers and Red Velvet Cookies!

My Mom also made a guest appearance yesterday on a brand new episode of “29 Minute Meals” LIVE where I shared this scrumptious One Pot Chicken Fajita Pasta Recipe.

Speaking of one pot recipes, this One Pot Greek Pasta recipe is one for the books! It’s SO flavorful and easy to make! I ate it for back-to-back-to-back meals last week and was so bummed when it was all gone!

(Before Anyone Else for those of us who literally had to google what BAE meant in the very recent past 😉 )

When it comes to comfort food, I think of recipes I grew up with in Oklahoma, biscuits and gravy, mac and cheese and my Dad’s fried chicken. Now that I’m living a healthier lifestyle in California, I’ve had to redefine comfort food.

New comfort food to me is incorporating some of the aspects of the old comfort food favs in new, healthier, yet still totally delicious, ways!

One of my new favorite things is my “Farmers Market Recipe of the Week”, while I’ve always been a big fan of the Farmers Market, I usually just pick up ingredients I need for already planned recipes.

Lately, I always try to pick up a couple of “random” items then turn them into a new recipe for the blog. This helps me think outside of the box and come up with something that’s fresh, local & seasonal!

Tomato Basil Double Cheese Crescent Triangles

These Double Cheese Crescent Triangles are adapted from the Pillsbury version I’ve been making for years!

I added fresh tomatoes and basil for an extra burst of flavor which make these the perfect side or appetizer at any Italian dinner!

Double Cheese Crescent Triangle Ingredients

Ingredients

  • 4 oz tomato basil feta cheese
  • 1 tbsp fresh basil (minced)
  • 1 tbsp tomatoes (minced)
  • 1 tbsp green onions (chopped)
  • 1 egg (divided)
  • 2 tbsp parmesan cheese (divided)
  • 1 can Crescent rolls

Preheat the oven to 375°F.

Start by combining the feta cheese with the basil, tomatoes and green onions in a small mixing bowl.

Next crack the egg into a separate small bowl and whisk well.

Measure out 2 tbsp of egg and add to the feta herb mixture along with 1 tbsp of parmesan cheese.

Roll out the crescent dough and press perforations together. Cut into 24 squares.

Now place a small amount of the cheese herb mixture in each of the squares.

Next fold the crescent dough over the cheese into triangle shapes and place on a baking sheet.

Brush the tops of the pastries with the additional whisked egg, then top with the remaining parmesan cheese.

Place in the oven for 11 minutes.

Grilled Jalapeño Poppers

These little morsels were meant to be a part of my Superbowl Party menu, but with so little time and so much over-ambition they did not make it on to the smorgasbord of hor d’oeuvres last Sunday.

Never fear, two days later these little poppers made the perfect side for my Mexican Meatloaf!

Ingredients (serves 4)

  • 10-12 Jalapeño Peppers
  • 4 oz goat cheese
  • 1/4 cup parmesan cheese
  • 1/4 cup cheddar cheese
  • 1 small tomato (chopped)
  • 2 tbsp green onions (chopped)
  • 1/2 tsp salt

Mix all ingredients except the Jalapeños in a small bowl. Slice the jalapeños lengthwise and remove the seeds.

Stuff the cheese mixture into the jalapeños.

Place the stuffed jalapeños on a pre-heated grill covered in cooking spray.

Grill the peppers 5-7 minutes or until cheese is melted and voila! These poppers make a great side dish for Mexican food or a fun Gameday Grub snack!
