Grilled Caprese French Bread Pizza

Last weekend was Memorial Day weekend, which means the unofficial start of summer! I don’t know about y’all, but I am SO excited for grilling season and all of the fresh summer produce popping up at the local farmers markets and grocery stores!
One of my favorite salads to eat during the summer is a classic caprese salad. Over the years, I’ve put several of my own twists on the salad, like this Crispy Eggplant Caprese Salad, which is always a show-stopper at dinner parties and this Quinoa Caprese Salad, a healthy side dish I always bring to picnics and BBQs during the summer!
Grilled Caprese French Bread Pizza
Today, I’m turning my favorite salad into a pizza! Grilled tomatoes, smokey mozzarella cheese and fresh basil pesto fill this french bread pizza with all of the flavors of a caprese salad.
How to Make French Bread Pizza on the Grill
French bread pizza is easy to make on the grill and only takes 15 minutes to prepare! After slicing the french bread in half lengthwise, cover the bread with pesto and mozzarella cheese, then place on the grill. Grill the tomatoes on the side, then place on top of the french bread pizza with fresh basil and a drizzle of balsamic reduction. Easy as that you have a grilled french bread pizza!
How do you grill bread?
French bread should be grilled over medium heat for 5-6 minutes.
How do you grill tomatoes?
I grill tomatoes on non-stick foil to keep all of the juicy seeds in the tomatoes without spilling out in between the grill grates. It also makes for an easy clean-up! The tomatoes should be grilled for 5-6 minutes over medium heat.
What is french bread pizza?
A loaf of french bread replaces pizza dough for french bread pizza, then can be topped with any of your favorite pizza toppings.

Crispy Goat Cheese Strawberry Avocado Salad, Pineapple Mango Kale Salad, Italian Corn Salad or Caramelized Beet and Feta Cheese Salad are all great options to serve on the side of french bread pizza!

Grilled Caprese French Bread Pizza
Ingredients
- 1 loaf french bread
- ½ cup basil pesto
- 16 oz fresh mozzarella cheese, sliced
- 3 large tomatoes, sliced thick
- 12 basil leaves
- 4 tsp balsamic reduction
Instructions
- Slice the french bread in half lengthwise. Spread ¼ cup of basil pesto on each half and top with the sliced mozzarella.
- Place on a grill over medium heat, along with the tomatoes.
- Grill both for 4-6 minutes.
- Remove from the grill, place the tomatoes on top of the cheese, along with the basil leaves.
- Drizzle with the balsamic reduction and serve immediately.
Notes
- I recommend grilling the tomatoes on non-stick foil.
