A few weeks back I was doing some serious recipe planning for the upcoming months. I sat down and brainstormed new recipes for 6 hours straight. Let me tell you how hungry one gets after recipe brainstorming for 6 hours straight, very hungry, only to realize that all of the recipes I’d been creating in my mind over the last 6 hours were not reality yet and I had nothing to eat for dinner, such a buzz kill, lol!
Luckily over the next couple of weeks, all of the recipes did become a reality and some very delicious dinners were eaten, this Buffalo Chicken Dip Pizza being one of those!
Yes, I took the greatest dip in the history of the planet earth and put it on top of the greatest Italian creation ever!
And it was just as magically delicious as it sounds!
I grilled the pizza, because I’m on a total grilling kick these days, but the pizza can just as easily be baked in the oven! You can make homemade pizza dough for the crust, or purchase the crust in the store, depending on the time you have available.
No matter how you make it, you’re going to absolutely LOVE this buffalo cheesy pizza creation!
- 1 chicken breast (app.½ lb.)
- ½ cup buffalo sauce (divided)
- 4 oz cream cheese
- ¼ cup blue cheese dressing
- 1 baked pizza crust
- 1 cup mozzarella cheese (shredded)
- 1 cup cheddar cheese (shredded)
- ¼ cup blue cheese crumbles
- ¼ cup pepperoncinis (sliced)
- ¼ cup pickled jalapeños (sliced)
Preheat the grill to medium. Cover the chicken breast in 2 tbsp buffalo sauce and place on the grill. Grill for 10-12 minutes per side. Remove from the grill, let rest 5 minutes, then dice.
Combine the cream cheese and blue cheese dressing together and spread on the pizza crust.
Top with the mozzarella, cheddar cheese and blue cheese crumbles.
Place on the grill on top of foil or a grill-safe baking stone.
Grill for 8-10 minutes, or until the cheese is melted.
Alternatively, you can bake it in the oven at 400° for 10-12 minutes.
Drizzle the remaining 2 tbsp buffalo sauce over the pizza and top with pepperoncinis or pickled jalapenos.
There’s so much cheesy goodness in every bite, I may or may not have made this pizza twice in one week… and eaten most of them both by myself 😉
