Truffle Fries

Truffle fries are one of those things that make you feel really fancy when you order them at a restaurant, but now you can make them at home with this easy recipe! Simply deep fry, air fry, or oven bake the fries, then toss them in truffle oil and parmesan cheese for that incredible, salty, umami flavor that we all know and love about truffle fries!

Whenever there’s an upgrade to truffle fries on the menu somewhere, I’m always voting YES for that upgrade! There’s just something about the earthy, umami-rich flavor of truffles that I can’t resist.
While the strong, nutty, garlicky flavor of truffle oil doesn’t work on everything, it really works on french fries, especially when paired with parmesan cheese! The saltiness, combined with the umami taste, and the crunchy texture of french fries is really the perfect combination.

- Russet potatoes – these are the best potatoes for making french fries. You can peel the potatoes or leave the skin on, totally your call. When selecting the potatoes, I recommend trying to find medium-size potatoes that are all approximately the same length. This will help when cutting the potatoes into fries, so that the fries are all about the same size and will cook at the same time.
- Vegetable oil – when cooking these fries in an air fryer, or oven, I like to use olive oil to coat the fries before cooking them. If deep frying the fries, you’ll want to use a vegetable oil with a high smoke point, like canola oil, safflower oil, or avocado oil.
- Salt + black pepper – to season the fries.
- White truffle oil – you can find this ingredient near the other types of oil at some major grocery stores, specialty food stores, or online. While it can be expensive, a little truffle oil goes a long way, so a bottle should last you a while. I recommend white truffle oil for this recipe because it has a more delicate flavor than black truffle oil. Black truffle oil is more potent, with a more earthy flavor profile, while white truffle oil has a more garlicky flavor.
- Parmesan cheese – for this recipe, you’ll want finely grated parmesan cheese. You can use a microplane to grate the cheese at home, or buy pre-grated cheese at the grocery store.
- Fresh parsley (optional) – to garnish the fries for a pop of color and fresh flavor to finish the dish.
Instructions
Follow the instructions below to make the truffle fries in an air fryer or in the oven. For instructions on deep frying the french fries, proceed to the next section of the post.
- Slice the potatoes into french fries. I recommend starting by slicing each potato in half lengthwise. Depending on the thickness of the potatoes, you can then slice each half lengthwise again through the middle, or slice each half into 3 sections. Then proceed to slice each section into 1/4″ fries. Repeat until all of the potatoes have been sliced into fries.
- Soak the fries (optional). If you’re in a hurry, you can skip this step. But if you plan ahead a little bit, this step will help you achieve the crispiest fries. Simply submerge the sliced fries in a large bowl, or casserole dish, filled with water. Let them soak for 1 hour. After the soaking time, remove the sliced potatoes from the water and pat them completely dry with paper towels before seasoning and cooking the fries.
- Oil the fries. Toss the fries with olive oil until they’re covered. Sprinkle salt and black pepper over the fries and toss until they’re fully coated.
- Cook the french fries. Place the fries in a single layer in an air fryer basket, with enough space around each french fry for the air to move around it. Cook for 8 minutes at 380°F. Flip and continue cooking for an additional 8 minutes. Remove the fries from the air fryer. If you’re cooking multiple batches of fries, remove the first batch of cooked fries and place them on a plate or cutting board. When you’re done with the last batch of fries, add all of the fries back to the air fryer (it’s okay if they’re overlapping at this point) and air fry for 1-2 minutes to heat them up. If cooking the fries in the oven, preheat the oven to 425°F. Spread the fries in a single layer on a parchment-lined baking sheet. Place in the oven for 20-22 minutes, tossing halfway through.
- Season with truffle oil and parmesan cheese. Once all of the fries are cooked and crispy, add them to a bowl. Toss them with truffle oil, parmesan cheese and fresh chopped parsley. Serve immediately.
How to make them in a deep fryer
If deep frying the french fries, slice the potatoes into fries. Optionally soak the fries, or go straight to deep frying them. Heat the oil in a deep fryer to 300°F. Add the fries to the hot oil and cook for 3 minutes, shaking them halfway through the cooking time. Remove the fries from the oil.
Turn the heat up on the deep fryer until the oil reaches 350°F. Once the oil is hot, add the fries back to the oil. Cook for 5-6 minutes, or until the edges are brown and the fries are crispy.
Drain the fries and immediately toss them with the salt, black pepper, truffle oil, parmesan cheese and parsley.
How to make them with frozen fries
Turning frozen fries into homemade truffle fries is a great EASY way to level-up your fry game! Simply prepare 1 pound (16 ounces) of frozen fries according to the package directions. These can be cooked in the oven, air fryer or deep fryer.
Once the fries are cooked, immediately toss them with 2 tablespoons truffle oil, ¼ cup grated parmesan cheese, 1 tablespoon fresh chopped parsley, 1 teaspoon salt, and ½ teaspoon black pepper. Serve immediately.
Storage and reheating
These fries are best eaten immediately. But if you have leftovers, they can be stored in the fridge in an airtight container for up to 5 days.
I recommend reheating them in an air fryer at 400°F for 3-4 minutes. You can also heat them up in the oven at 400°F for 4-6 minutes.
Recipe notes
- For extra crispy french fries, always soak them before cooking. This will help remove some of the excess starch from the potatoes. And it will help the fries crisp up in the air fryer, oven or deep fryer.
- You can cut the potatoes into fries ahead of time and leave them soaking in water until you’re ready to season and cook them. Always be sure to drain the cut potatoes and pat them dry completely before seasoning and cooking them.
- Feel free to cut the potatoes as thick or thin as you like. The thinner the fries are, the quicker they will cook. The thicker the fries are, the longer it will take for them to cook up brown and crispy.
- Leave the potato skins on the potatoes to save time. This will also help the fries achieve an even crispier texture.
- Do not season the potatoes with the salt until you’re ready to cook them in the air fryer or oven. Seasoning the potatoes with salt, then letting them sit for more than a couple of minutes, means the salt will pull moisture from the potatoes and the fries are more likely to come out of the air fryer or oven soggy.

- Toss the potatoes in olive oil, then toss with salt and black pepper.
Cook them in the air fryer.
- Place in a single layer, with the fries not touching, in an air fryer basket. Air fry at 380°F for 16 minutes, flipping halfway through.
- If you’re cooking multiple batches of fries in an air fryer, remove the first batch of cooked fries and place them on a plate or cutting board. When you’re done with the last batch of fries, add all of the fries back to the air fryer (it’s okay if they’re overlapping at this point) and air fry for 1-2 minutes to heat them up.
Or cook them in the oven.
- Evenly spread the seasoned fries out on a baking sheet lined with parchment paper. Bake at 425°F for 20-22 minutes, tossing halfway through. Remove from the oven when lightly browned and crispy.
Finish the fries.
- Remove the fries from the oven, or air fryer, and toss with the truffle oil, parmesan cheese, and parsley. Serve immediately.
