What takes these waffle fry nachos from tasty to epic? The BEST Green Chili Cheese Sauce, that’s what! This cheese sauce is spicy, creamy and so delicious! It’s made with a creamy blend of half and half, cream cheese and two Cabot cheddar cheeses!

A mix of Cabot Seriously Sharp and Extra Sharp Cheddar packs a serious punch of flavor in this cheese sauce. Add a can of diced green chilies for just the right amount of spice!

  • Frozen Waffle Fries
  • Half and Half
  • Cream Cheese
  • Butter
  • Salt
  • Cumin
  • Garlic Powder
  • Diced Green Chilies
  • Cabot Seriously Sharp & Extra Sharp Cheddar Cheese

The great thing about nachos is making them your own by adding any or all of your favorite toppings! Here’s a few things to try.

  • Diced Tomatoes
  • Sliced Jalapenos
  • Fresh Chopped Cilantro
  • Diced Avocado

How to make them

  1. Cook the waffle fries.
    • Preheat the oven to 450°F.
    • Arrange the waffle fries in an even layer on a parchment-lined rimmed baking sheet.
    • Place the fries in the oven and cook for 20 minutes.
  2. Prepare the green chili cheese sauce.
    • Add half and half, cream cheese, butter, salt, cumin and garlic powder to a medium pot on the stove over medium heat.
    • Stir consistently until the mixture is smooth and creamy.
    • Add the diced green chilis and stir to combine.
    • Reduce the heat on the stove to low, add shredded Cabot cheddar cheese and stir constantly until the cheese has melted into the sauce.
  3. Assemble the nachos.
    • As soon as the waffle fries come out of the oven, pour the green chili cheese sauce over the fries.
    • Add the toppings of your choice and dig in!

Recipe notes

  • This recipe makes enough nachos to serve 4-6 people. Since we’re a family of 2 at my house, we make the green chili cheese sauce, but only cook half of the waffle fries for one meal and then cook the remaining waffle fries for another meal. The cheese sauce will stay good in the refrigerator for up to 5 days and reheats easily in a pot on the stove over medium heat.
  • The cheese sauce is good for more than just nachos! I promise that you’re going to fall in love with this epic cheese sauce and want to put it on everything… and I fully support that!
    • Use it as a dip! Dip your favorite chips or veggies straight into the cheese sauce.
    • Make traditional nachos. No waffle fries in your freezer? No problem! Pour this delectable sauce over tortilla chips to make traditional nachos.
    • Smother a burrito. Prepare a chicken, veggie or carne asada burrito and cover it in this green chili cheese sauce. We did this with breakfast burritos in our house and I can tell you that it was truly epic!
  • Do not overcrowd the baking sheet of waffle fries. You want the fries in an even layer so they get nice and crispy, which might mean using two baking sheets. Not to worry, you can always combine the fries back onto one baking sheet after they’ve cooked in the oven and top them with the cheese sauce.
  • Want to make meaty waffle fry nachos? No problem! Feel free to add some shredded rotisserie chicken, carne asada, or try my Chipotle Pulled Pork on these nachos! It’s easy to make in a slow cooker and so delicious!

  • Turn the heat on the stove to low and stir in the shredded Cabot cheddar cheese.
  • As soon as the waffle fries come out of the oven, pour the green chili cheese sauce over the fries, then top with the diced tomatoes, jalapenos, cilantro and diced avocado.

Notes

  • This recipe makes enough nachos to serve 4-6 people. To make nachos for 2, prepare the green chili cheese sauce, but only cook half of the waffle fries and cover it with half of the cheese sauce. When ready to eat the nachos again, cook the remaining waffle fries and reheat the remaining cheese sauce in a pot on the stove over medium heat. The cheese sauce will stay good in the refrigerator for up to 5 days.
