Breakfast Taquitos are the perfect easy breakfast recipe, made with chorizo, or soyrizo for vegetarians, scrambled eggs & pepper jack cheese!
Cinco De Mayo is just a few days away and what better way to start the celebration than with your first meal of the day!
Breakfast Taquitos are so easy to make! You can even prepare them the night before, then bake them up in the morning, making the start to your day so simple!
I made mine with soyrizo, my favorite vegetarian meat substitute, but you can also use chorizo if you prefer!
I topped them with guacamole, queso freso, diced tomatoes and cilantro. You can also dip them in sour cream, guacamole or salsa, or drizzle with your favorite hot sauce. Really, the dipping/topping possibilities are endless!
While I made these with Cinco De Mayo in mind, there’s no way I’m letting an entire year pass before making these again! They are so delicious and perfect every week for “Taquito Tuesday” or a fun weekend brunch fiesta!

Ingredients you’ll need
- 6 eggs
- ¼ cup milk
- ½ tsp salt
- ½ tsp black pepper
- 12 oz soyrizo or chorizo
- 1 cup pepper jack cheese (shredded)
- 12 small flour tortillas
- OPTIONAL TOPPINGS: salsa, queso fresco, guacamole, diced tomatoes, cilantro
Step by step instructions
Preheat the oven to 425°F.
Whisk the eggs, milk, salt and pepper together in a small bowl.
Heat a skillet over medium heat and scramble the eggs, then set aside.
While the eggs are scrambling, cook the soyrizo, or chorizo for 6-8 minutes in a separate skillet over medium heat.
Once the eggs are scrambled and soyrizo is cooked, begin assembling the taquitos.
Place a spoonful of eggs and spoonful of chorizo in the middle of each tortilla. Sprinkle with the pepper jack cheese.
Roll up tightly and place seam side down on a baking sheet.
Place in the oven and bake for 12-15 minutes.
Remove from the oven and add your favorite toppings or serve with your favorite dip, such as guacamole, salsa or sour cream.
